One Bowl Chocolate Cake III

I tweaked this recipe just a bit and thought the result was sensational; probably better than any other cake I've made. I upped the cocoa to 1 cup and the vanilla to 1 Tbs. Made as cupcakes and added a tsp of mini choc chips to each cupcake. The real test of a good cake is if it tastes good without frosting. This one does! To add to the flavor perfection, it's all done in one bowl. What could be better?

Zippy Beef Bake

Will make again! Just using what I had on hand, I substituted regular onions for the green, yogurt for sour cream, mexican blend cheese for the monterey jack, left out the mushrooms, and cooked minute brown rice in the dish instead of using cooked rice. I also added a chopped bell pepper and a handful of chopped grape tomatoes. The only change I will make is to use less salt next time. We all loved it!

Cinnamon Cookies II

I didn't add vanilla or salt, even though I meant to... I'm glad I didn't though, because these cookies have a perfect flavor. They taste like a cinnamon bun in a cookie. :) Yes they are flat, but I find it charming. I probably doubled the cinnamon, but I didn't measure, so I'm not sure.

I love this recipe because it really tastes like cream cheese. If you're looking for a more traditional flavor, use only one 8 oz. package of cream cheese.

Grilled Lemon Yogurt Chicken

Thank you Chef John. I followed your recipe exactly, except that I used chicken breasts instead of a whole chicken (not a fan of bones), and my husband said that this was the best chicken ever. We eat a lot of different chicken breast recipes, so that says a lot.

Apple Pumpkin Muffins

Very delicious muffins! I used some other reviewers' suggestions: all whole wheat flour, halved the sugar and used applesauce instead of oil. Despite the healthy changes, the flavor combination is wonderful and sweet enough for my family.

Whole Grain Waffles

I made the recipe exactly as written with the exception of adding a little cinnamon. I can't believe the waffles turned out so well! My kids are in heaven! edited to add: I now make these all the time, doubling the recipe and freezing the extra waffles for a quick toaster breakfast when we're in a hurry.

Baked Teriyaki Chicken

Wonderful flavor. I followed the recipe exactly, except I used six chicken breasts in a 9x13 dish. I dumped the sauce over the top and flipped half way through instead of basting.

Chocolate Chip Banana Muffins

Apple Crisp II

I made this for my husband's annual thanksgiving lunch potluck. It was delicious! I did cut the water in half, cut the sugar in the apples in half and doubled the crust. Next time I would use 1 1/2 times the crust instead of 2 times, as I felt the crust was a bit too thick. Overall, I felt it was better than apple pie!

Pumpkin Gingerbread

I followed the recipe exactly, with the exception of using only 2 cups of sugar, and cooking at 325 for a bit longer. Very tasty gingerbread; definitely the best I've ever eaten. It is very flavorful and moist. Thanks!

Janet's Rich Banana Bread

Very good banana bread. I decreased the sugar by 1/4 cup and it was still plenty sweet for me. I made it into overflowing mini muffins, and it was done in only 15 minutes. Perfect portion sizes without slicing! Also, I substituted yogurt for the sour cream, applesauce for 1/2 the butter and pecans for the walnuts - just personal preferences. Thanks!

Frozen Chocolate Mousse Squares

Very good dessert. It's like a no-bake chocolate cheesecake. It is hard to cut when just taken out of the freezer. I suggest taking it out 30 minutes before you want to eat it.
