Irresistible Pecan Pie

It was a Thanksgiving hit! I did as others suggested and added flour and vanilla to the filling. I also only used one 2 cup bag of whole pecans and chopped up part of the bag for the "quartered" pecans and chopped some up even more for the "finely crushed". I doubt I had more than 1/2 cup for the whole pecans on the top, but it was still great. I will definitely make this one again.

Turkey Polish Sausage and Peppers

I used only one of each pepper and it was still a LOT of vegetables. I might cut back a bit next time, but it's a good, colorful mix. All those vegetables have to be good for you, right? I also think the veggies were a little overcooked, so I will cook them 7 or 8 minutes instead next time.

Manicotti Italian Casserole

My husband really enjoyed this - what's not to love? He wants to add pepperoni throughout next time. We'll see... Not the healthiest dish, but anytime my husband WANTS to take leftovers for lunch the next day, I know the recipe's a keeper.

Basil Chicken over Angel Hair

I thought the basil overpowered this recipe. Fresh basil was pricey for me since my store only sells it in a huge package. If I try this again, it will be with dried basil.

Awesome Honey Pecan Pork Chops

Definitely one of my best looking dishes, and it was super easy. This recipe is what it is-- honey on otherwise bland pork chops. Next time I'll try to season the pork some more and maybe use less honey. It was a bit sweet for me.

What the heck is chili sauce?! I'd never heard of it, but thought I would find it in the store. No luck. I bought beanless canned chili instead. Seems to be a LOT of veggies. Not necessarily bad, but I think I would have preferred less.

Romano Chicken

I also baked this in the oven instead of microwave. 45 minutes at 350. I will also try it with Provolone instead of Swiss. My husband was impressed - he called it "advanced cooking" even though it was pretty simple.

Chicken Marsala

Pretty good! My only criticism is that I got to the simmer part of the recipe and wondered where the EVOO came in. I missed the part about melting the butter IN the oil. Still turned out OK.

Easy Mexican Casserole

I was a little reluctant about this one, just because the main ingredients are chips & salsa, but it was tasty and easy, and the leftovers disappeared quickly. I cut back on the sour cream and cheese to save a few calories, but let's face it, if you make this, you're basically having nachos for dinner. Not exactly health food.

Easy Focaccia

The rosemary and Parmesan are sprinkled on top of the dough, but there wasn't much flavor integral to the dough itself. The recipe wasn't clear if I needed to account for the time it took for my oven to preheat, and as a result I undercooked the bread.

Garlic Chicken

I felt like I followed the recipe to a tee, but somehow I got too much oil on the chicken breasts. I cut the breasts in half because they were pretty big, and I still used up the 1/4c of oil and the parmasean/bread crumb mixture with two breasts. They turned out pretty greasy. I'll try it again, but I think I'll brush the oil on instead.
