These were a big hit with my niece and nephews! Green Booger cookies for Halloween and they taste great! And now that I know what they look like when they're done, I can make the next batch look like eyeballs by using vanilla pudding mix and white chocolate chips, colored frosting in the thumbprint and a chocolate chip in the center. Plus a little red frosting drizzled on the white cookie part to look like a bloodshot eyeball!!!

Quick Artichoke Pasta Salad

This FANTASTIC!! I used dried parsley because that was all I had and I chopped up some fresh broccoli very fine and we can't get enough of this!! I love that the only dressing added is that of the marinade from the artichokes! YUM YUM YUM!!!

Homemade Black Bean Veggie Burgers

I thought this would be better as a burrito filling. My husband hated it. I don't think it tasted bad but it doesn't taste like a burger should.

Eggplant Parmesan II

My first attempt at eggplant and it was really delicious. I followed some other advice and "sweated" the eggplant before I baked it. And even though I rinsed the salt off thoroughly, it made the eggplant far too salty for my tastes. So the next time I make this I'm going to skip that and see how it turns out. Family liked it too and all agreed this is a keeper!

Soft Chocolate Cookies

I made exactly as the recipe indicated but added a half a bag of cherry chips (I wanted peanut butter chips but didn't have any) and they were FAN-TASTIC! This is a very versatile recipe that you could change or add things to and it will still be great! I used parchment paper and just dropped by spoonfuls and they came out perfect. This is one we'll put in the "keeper" file.

Smooth Sweet Tea

This beats any prepared mix I've tried. I agree with others that said the baking soda is essential for taking away that bitterness. It was a tad on the sweet side for me but everyone else in my family thought it was perfect! From this transplant to the South...Thank You for teaching me the secret to Smooth Southern Sweet Tea!

Orange Breakfast Rolls

I love orange flavored baked goods and these weren't bad tasting but I felt the lacked something. I also felt this is not a recipe a novice could turn out with much success. Not sure I will make this again.

Raspberry Chocolate Supremes

These have become a staple for parties. I've made a few times now and they are SO good! Honestly, you can't go wrong with these! I use seedless jam because I don't care for the seeds. I bet an apricot or orange jam would also be delicious!

Old Fashioned Onion Rings

I LOVE onion rings but I can only eat sweet onions and most restaurants don't use sweet onions for their onion rings. With this recipe I get delicious restaurant style onion rings made the way I like them! The recipe is a little time consuming but the payoff makes it worth it! DELICIOUS!

Italian Love Cake

This was amazing! It's not too sweet or rich but looks like it would be! I made this for Christmas dinner at my in-laws. I wanted something new and Since they had lived in Italy for 3 years thought this might be something they'd enjoy. They LOVED it! I took someones advice and made the cake part 24 hours before I needed it and then put it in the fridge to "rest." I then made the chocolate mousse topping the next day and had everyone add their own amount to their piece. It was perfect and moist and the chocolate mousse topping was just the perfect amount of sweetness to add! This is one I will be making again and again! I've already passed on the recipe to the in-laws!

Just the right amount of sweetness. Another suggestion of you like them a little crispier...chill the batter in fridge for a couple hours. My next door neighbor has been making these every Christmas for 59 years and that was her advice to me!

Slow Cooker Cranberry Pork

This is still the best recipe for Pork loin! You can substitute white grape juice or apple juice or even water and it still comes out DELICIOUS! I bet even orange juice would be tasty! I even substituted Old Bay seasoning when I didn't have ground mustard and it was fabulous too! This recipe just can't fail!
