Vegan Bean Taco Filling
I saw this and decided to give it a try. I omitted the cornmeal, because I'd never use the rest of it for anything and couldn't see a need for it. I also decided to leave the salsa out but add taco sauce and fresh tomato chunks when serving, and that worked well. I wasn't sure how spicy this was if made by the recipe, so was a little more conservative with the spices; next time I will use more. This was great and healthy and easy; it's also a good base to experiment with, I will make it again.

Healthier Creamy Au Gratin Potatoes
I wanted another "go to" side dish recipe for those times I am asked to "bring something" and this looked good. I made it basically as is, though when I changed the amounts to alter the servings, I mistakenly calculated the milk wrong so mine came out a bit dry. I followed other reviews' suggestions and minced the onion. I also took the sliced potatoes and minced onion, and mixed them together with the salt and pepper before adding the cheese sauce. Added a dash of garlic powder, but this was still bland...not sure what it needs....maybe fresh rosemary? I will probably try it again and see if I can liven up the flavor, it's worth another shot.

Bohemian Macaroni and Cheese
I tried this yesterday and basically liked it, but as written it's too dry. I bought Hodson's Mill whole wheat organic mac and cheese and prepared according to package directions. As one reviewer suggested, I sauteed turkey bacon, onion and green pepper while the pasta cooked. When the pasta was done I mixed together: it looked dry so added extra milk and some shredded mild cheddar. Added some whole wheat bread crumbs on top and baked at 350 about 25 mins. It came out dry, though very tasty. If the original poster of this baked it for 45 mins it would taste like cardboard. I will make again, but add even more milk. Baking time seemed right; I'll stick with that. I think it would be 4 stars with more moisture.
