Pumpkin Spice Cupcakes

The first thing I noticed is that just about every person making these were changing the recipe to make them better so therefore they are not rating this specific recipe. I am only giving this recipe 3 stars because there are a few things I noticed that is a big no no. First for the perfect moist cupcake you should use oil instead of butter. While butter does taste better the oil will give it the moistness that is needs. The second thing was the ratio of pumpkin. I added an extra 1/4 cup because I knew it would need it. Also it does not matter whether or not the eggs are at room temperature. I use them straight from the fridge. Because I am adding extra pumpkin I just make sure that the spices are not level but instead are slightly mounded. One last thing that I add is 1/4 cup applesauce because that will also give them a great texture. To cook them, you should ALWAYS bake cupcakes at 350 degrees so they cook more evenly and then you should not bake them for 25 minutes, otherwise you will overbake them. I cook them for 19 minutes and they come out perfect. This recipe does have potential but I have created my own recipe since I have more then 10 years of baking experience.

Beef and Broccoli

Simply amazing! I added a few things to make it even better though. First I added about 2 teas. beef boulion. Then I finely sliced 1 medium onion, chopped 2 green onions, finely chopped about 2 teas. fresh ginger and also added black pepper. I also doubled the sauce part of the dish because it seemed like it wouldn't be enough.

Roasted Rack of Lamb

I would really give this 10 stars if I could. It has been years since I have had lamb and was uncertain how much I would still like it and turns out I still LOVE it! This recipe is very simple to follow but the taste is just out of this world. I was hesitant about the salt because of reading others reviews but I cut back a bit anyways on the lamb itself before searing it. I added extra pepper and garlic and used dried rosemary and all turned out perfect. I cooked it to 130 and then covered it for 5 minutes and came out rare/medium rare. Do not be worried about the mustard if you arent a big fan, you can barely taste the mustard. I will definately be making this again and again!

Libby's® Famous Pumpkin Pie

This is a pretty good pumpkin pie recipe. I always add extra spices to it because I like my pie full of flavor. I find this pie kind of average. To make it extra special I suggest doing something to it to make it shine more. Like using a spiced crust or something. I would use this recipe again only because it is simple and can be modified any way.

Halibut with Cream Sauce

Being from ketchikan, Alaska myself and eating a lot of fish we all seem to know which recipes are good and which ones just don't work out with fish and I have to tell you that this particular recipe is excellent. This fish can go with just about anything and makes your mouth water with every bite.

Orange Dream Punch

I give this recipe 5 stars for taste but 3 stars for appearance. The ginger ale kept separating from the range cream mixture and it was kinda embarrassing serving it to people when they had to use spoons to keep stirring to keep it mixed. Somehow i will learn how to fix this problem. I also used orange creamsicle ice cream instead of the sherbet.

Waffles I

I made this recipe exactly as it says except i took one users advice and did the egg whites seperate and then folded them in. I was almost certain that it would make them light and cispy but instead almost the moment they came off the waffle iron they become soggy. I even added cinnamon and extra sugar to prevent them from being blan but it didnt help. These waffles were not only soggy but very blan.

Crispy Fish

I did not have enough potato flakes so i used 1 1/2 cups of potato flakes and 1 1/2 cups flour. i also used salmon and then deep friend it. this was very crispy and delicious. oh and i also addded 1/2 cup italian style bread crumbs. This is a very good recipe, the only thing i would highly reccomend is not soaking the fish in water. dry it really well and then dip in an egg and milk mixture then coat with dry mix.

Lemon Cream Cheese Frosting

This was an alright frosting, I found it to be a little too sweet though so I would reccomend using it on something like shortbread, rather than sweeter goods.

Simple White Cake

It was tough coming up with the perfect review for this recipe. I have been searching everywhere for the perfect white cake recipe. This recipe has a YUMMY taste & really does remind you of a sugar cookie, however the appearance just is not appealing to me. They didn't necessarily fall, but they dont keep their shape once out of the oven. I am a cupcake expert and when using this recipe I was hoping for a puffy cupcake, didnt happen though. Despite trying 4 variations to make them rise, i just couldnt do it. If you will be covering it with lots of frosting then this is a good recipe, if you care about appearance then it doesnt work out so well. My advice for that perfect cupcake, use the recipe on this site for crazy chocolate cake, just do not add the cocoa and add more vanilla oh and use about another 1/4 cup of flour to make up for the baking cocoa. I also added a little almond extract for flavor.

Best Egg Rolls

I am giving this 4 stars instead of 5 simply because it sounded just a bit to blan for me. I changed the recipe to my liking but cannot rate this recipe for my creation. This recipe however is a great starting point for those who have never made egg rolls before.

Sloppy Joes II

If I could give this a rating of 0 I would! Both my husband and I disliked it and then was suprised to see that our 7 year old and 1 year old disliked it as well. This recipe is WAY to sweet and I even cut back on the brown sugar. I was hesitant to use ketchup because I normally use tomato sauce, which is more traditional. I even tried fixing the sweetness by adding 1/2 can tomato paste and some water but nothing helped. I nearly gagged and couldnt believe this recipe got such high reviews.

This is a good recipe. Kind of bland but its easy and has a nice flavor for the most part. The only difference I made was I used fresh onion and extra fresh parsley. I would probably use this recipe again.

Special Buttercream Frosting

This recipe makes a lot of frosting so if you need it just to decorate a 9 inch double or rectangle cake then i would suggest cutting it in half. This frosting is actually quite tasty and not too sweet like I thought it would be. It has has great texture and works perfect for decorating :) I had a bit of raspberry extract to mine for a nice flavor

Ultimate Maple Snickerdoodles

These cookies are very delicious. They really need to be watched when baking them though because if you over bake them then they come out crispy, which I prefer my cookies chewy. I even underbaked them in hopes they would continue cooking on the pan, didnt work out so well. The trick is finding the perfect baking time for your oven, bake them until they look like you want to give them just 1 more minute, slightly set in the middle. Remove them from the pan right away and cool. These cookies only hold up for about 2-3 days. They taste best warm!

Corn Dogs

I would give this recipe 5 for taste but only 4 for ingredients and 4 for crispiness. Everything went great with the whole process except i did dry off the hot dogs and coat them in flour and still hard a hard time getting the batter to stick so I had to add about another 1/4 cup milk to thin it down since the batter was way to thick. After doing this i had a little bit easier time getting it to stick to the hot dogs however it still had to be rolled several times with my fingers to coat. They cooked nicely and came out tasting light and fluffy and airy but after sitting for about 5 minutes they became soggy. It wasnt necessarily a bad thing because they still tasted great but definately not a recipe for someone who likes crsipy corn dogs. And yes i had them at a high temp in the deep fryer. I also cut these into mini dogs for the kids, they loved them :)

Mouse's Macaroni and Cheese

The only reason why I did not give this 5 stars is because of the noodle/cheese ratio like many other reviewers have stated. At first when I saw how few noodles there were I freaked out and boiled extra just in case, turns out I thought I needed them because there was so much sauce and the sauce was thin. Well that was a mistake adding extra noodles because after it was baked it came out a little dry for my liking so luckily i reserved some sauce to pour over my mac & cheese. This recipe tasted great and if you want cheesy and creamy mac and cheese then DONT add extra noodles.

Best Lemonade Ever

This lemonade was VERY good. I made a few changes but my changes did not change the overall taste of this recipe. I cut back on the sugar by 1/4 cup to total 1 1/2 cups. I also did not wait for the mixture to get to room temperature. I took it right off the stove and put in several large blocks of ice and put it in the refrigerator for 10 minutes until cooled. I only added 6 cups of water because I added ice to cool the mixture and I didnt want it to become too watery. I served it chilled over ice and added my own strawberry puree. I took about 2 cups of frozen whole unsweetened strawberries and put them in a food processor while still frozen. I processed them until they were chopped and then added them to a blender with about 1/2 cup of water and 3 tbsp. sugar. I blended it until smooth and added about 2 tbsp. puree per glass of lemonade and topped it with whipped cream. My only complaint is that it doesnt make enough for an average family of 4 who loves lemonade, it was gone ine 1 day :)
