Southwest Chicken Bake

This was really good and super easy. I made it with green chilis rather than green onions. I also didn't have frozen corn so I used a can or corn with poblano peppers. And I misread the instructions and put the cooked rice at the bottom of the casserole pan and baked it all together. I figured it would soak up extra liquid, but it actually came out a bit watery (user error, I doubt the recipe as is has that issue). Was so good even despite the error! I'll definitely be making this again.

Salsa Chicken

This was seriously SO good! And it was the easiest thing to make, perfect for busy weekdays! I followed the instructions, used a package of low sodium taco seasoning and 5 pieces of chicken. It turned out perfectly. You can use cottage cheese instead of sour cream to spare some calories, but I doubt it is unhealthy either way. Serve it with a salad or some rice and beans and it makes a perfect meal! Thank you for sharing this!

Honey Mustard Grilled Chicken

Jalapeno-Blue Cheese Burgers

These are awesome. I followed the receipe to the tee first and then second time used ground turkey. Both are really good. The peppers are warm because the cheeses help offset. Throw some avocado on there as well and it's delicious. Easy, quick, and so tasty. A real crowd pleaser (and if you like it with more heat you can throw in more peppers or add some chili powder). Thanks for the fab burger!!!!

Oh-So-Good Chicken

This was SO good! I used black beans instead of mushrooms. I took others' advice and added a packet of taco seasoning, freshly diced tomatoes, and a few dashes of hot sauce. Delicious and very affordable! Next time I will add fresh chopped onion as well to add the crunch factor.

Slow-Cooker Chicken Tortilla Soup

This was oooo easy and very flavorful. I followed suggestions of others and used canned corn (not frozen), chicken stock (in place of the water) and added a can of black beans. Started it on my lunch break and was ready for dinner at about 7:45. Next time I will add a bit more of the spices to give it a little more kick. All in all though, super tasty and ridiculously easy to make! Added cheese, avocado, and a dallop of sour cream at teh end for presentation (and lets be honest - cuz they make everything better). Awesome

Artichoke Spinach Lasagna

This receipe was super tasty. I think it was the mixture or red and alfredo sauce that really finished it off. Just had it over the weekend at a friends and am going home to make some more!
