Baby Back Ribs

Best ribs that I have ever made. Very easy to make, too. I took another reviewers suggestion--to marinate overnight with a dry rub, then apply a coat of bbq sauce before going into the oven. The ribs came out so tender, juicy and flavorful. It really made me feel like a Kansas City bbq chef.

Baked Potato Skins

These skins are exceptional--I inhaled all four potatoes worth when I made them. The oil brushing gives them a perfect amount of crispness and the additiona of paprika gives them that great seasoned appearance. Next time I make them, however, I will half the salt or omit it altogether. With the cheeses and bacon, there is plenty of salt and flavor. Writing this little review is making me crazy hungry.

Smoky Four Cheese Macaroni Bake

I just finished making and eating this for the first time and am glad I did. I used rigatoni instead of macaroni and increased the milk to 2 cups (and still a little dry, though better dry than soupy in my book).

Simple Spinach Lasagna

This is a good recipe, very simple. I felt like it was missing something like perhaps some eggplant or peppers. I made this with the idea of being able to heat it up for dinner over the course of the week and it lived up to the plan very well.

The Best Vegetarian Chili in the World

This recipe is solid. It will for sure become one of those standard, once-a-month, recipes in my kitchen. If you are looking for a chili recipe, look no further (right? because there are a billion chili recipes out there), this is the one.

Easy Red Beans and Rice

I used this recipe as an outline for my beans and rice meal and it worked well. I made the rice with some leftover broth. Also, I added some extra black beans plus triple garlic, a jalapeno and red pepper flakes. I do like my food hot, but it wasn't over powering for the dish.

Delicious Peanut Butter Cookies

I am really enjoying these cookies. I am not sure that it is the best recipe in the world, but they are so similar to the peanut butter cookies that I ate as a child, I have to give them at least four stars. Be sure to not overcook these because they will be very dry. I also topped each cookie with some leftover toffee chips that I had and I am glad I did.

Candied Salmon

don't use as much vinegar as it calls for - or use something else instead. The candied, caramelized onions were great though.
