Lime Chicken Soft Tacos

Good and easy meal. I added tequila, cilantro (instead of basil) and bottled lime juice, as other cooks did, and cooked everything together. It was yummy!

Tomato and Garlic Pasta

Quick and easy dish. Tasted better the night I cooked it than as leftovers. I used Feta, which added a different twist to the traditional parm and was quite good.

Mahi Mahi with Coconut Rice and Mango Salsa

We thought the fish was really good. I cut the red pepper in half, based on others' comments that it was rather spicy, and it still had a bit of heat. I enjoyed the mango, but others thought it was overpowered by the fish. The rice was decent, but I didn't think it was worth the calories and fat content the coconut milk brings to the mix!

Pasta Pomodoro

Good dish. I've made it with white wine and without, and with fresh and canned tomatoes. If we use canned tomatoes, we incorporate the wine; if we have good fresh tomatoes, we don't miss the wine. Good with penne and rotini, too. Quick, easy, and yummy!

Stuffed Shells I

We added in the spinach and used the small curd cottage cheese, as recommended. We made enough to freeze the stuffing so we can have a quick and easy meal on a weeknight.

Broccoli-Stuffed Sole

Nice, easy meal. We were out of broccoli and used spinach instead, and it was very good. We also had to add cooking time - the fish was still rare when we pulled it out after 25 minutes. It took another 7 minutes or so before it began to flake. Pair it with carrots and you have a pretty mix of colors on your plate.

Zesty Slow Cooker Chicken Barbecue

Good meal. Made it for my inlaws today and everyone enjoyed it. Added onion and garlic. Tried to boil off some of the liquid, but still felt it was a little runny. Next time will add in some cornstarch or flour toward the end of the cooking. Will cook again - nice, easy meal!
