About this Cook
I have progressed from a love-hate relationship with food (overweight) to rediscovering food and cooking. I enjoy experimenting with adapting recipes to a healthier version, and have been fortunate to have co-workers and friends as testers. On a personal level,I have spent the past 4-5 yrs working on becoming healthier to tackle the next 50 years and now spend a good deal of time enjoying walking and other outdoor activities though I still struggle getting the gardening just right.
My favorite things to cook
Italian remains my favorite but as I have dieted (and gotten tired of the same flavors over and over), I have really moved into dishes with bolder flavors, i.e. Tex-Mex, love cooking with New Mexico chilli peppers.
My favorite family cooking traditions
I think I want to start new traditions ...next for me is Asian, especially Thai....and incorporating vegetables into more snack foods and dishes.
My cooking triumphs
My chili using New Mexico chilli peppers was a smash at the office. Clam chowder and vegetable beef soup also received well.
My cooking tragedies
Being Italian, I cannot follow ANY recipe without changing it a bit...its hard to recreate what changes I have made. My one constant battle---my tendency to overcook meats (roasts, steaks,etc).

Classic Spanish Sangria
This is excellent, and allows for considerable variations to tastes and fruit availability. Highly recommended, and yes it is potent.....

Oven Fried Potatoes II
Easy and very tasteful. I did adjust by cooking some bacon and onion to crumble into mixture, a few apple slices and a touch of chili powder. After bakcing, added shredded cheese as topping and broiled to get nice crisp topping.

Maple Glazed Ribs
Excellent. You definitely want to double sauce. I was about to add BBQ sauce to original recipe, read more reviews and decided to try it as written....it is sweet and has a very nice tang.
