General Tao Chicken

This tasted great! Definitely took way longer than 50min... but perhaps that's because I'm new to the recipe. Made a few changes based on recommendations. -Added a can of water chestnuts. -Steamed frozen broccoli and added it afterwards. -Used 1 tablespoon and a half of fresh ginger -Used just over 3 tablespoons of vinegar -Used 2 heaping tablespoons of ketchup. -Added 3 teaspoons of fresh garlic Tasted great with Basmati Rice. Will definitely make again!

Easy Mint Chocolate Chip Ice Cream

From previous experience with non-cook ice-cream recipe I was skeptical... but this was wonderful. I took others advice and used 3/4 tsp of vanilla and 3/4 of peppermint extract. Just enough mint flavour. This recipe fit perfectly into my kitchenaid ice-cream attachment. For fun I added chunks of non-egg cookie dough at the end. Great easy recipe, will definitely make again.

Curried Honey Mustard Chicken

A delicious blend of flavours. Will definitely cook again. I only used 2 tablespoons of butter, and substituted the rest for olive oil. I added 10 minutes to the cooking time and it turned out great. The husband loved it!

Veggie Vegetarian Chili

My first attempt at chili and this turned out wonderful. I used 3 tablespoons of chili powder, and instead of mushrooms, I used celery. Awesome taste, very filling!

Gingerbread Biscotti

I make these every year and they're a HUGE hit. Dipping in white chocolate is a must. I've made it with various molasses, and I find Black Strap Molasses gives the best flavour. Love this recipe!

Basil Chicken over Angel Hair

Mmm, very very good! While this isn't as saucy as I usually like my spaghetti, it tastes great. My husband loved it! The only additions I made were adding a little bit of sugar to the sauce and marinating the chicken before hand. I did a basic extra-virgin olive oil, bit of red wine vinegar, basil, garlic, salt and pepper. This made a huge difference when I made it a second time. I like to double this recipe. This is a kind of spaghetti where the leftovers taste better every day! When I double I use 6 medium sized tomatoes.

Mulligatawny Soup I

Definitely double! We had this as a main course and ate so much. It was delicious. I'm not a big soup eater, and I loved this. Unless you hate curry, I can't see why someone wouldn't like this. I followed the recipe fairly closely. When I doubling I did not double the butter. Added a bit more curry and a few dashes of cayenne pepper. Also, I added the chicken when I added the broth. Wanted to make sure it had plenty of time to cook. Wonderful, will definitely make again and again.

Peppermint Meringues

Very happy with this recipe. For anyone having issues getting their eggs white to peak- the key is to separate the yolk and the whites while they are still cold (right out the fridge). Then you can wait for the eggs whites to come to room temperature. If you try to separate the eggs if they've been on the counter awhile, there's a good chance the yolk will mix in. You may not notice even notice it, but even the tiniest amount of yolk will prevent the whites from forming peaks.

Braised Balsamic Chicken

This was YUMMY! I did a mix of white and regular balsamic. Also used fresh roma tomatoes instead. Even my 2 year old ate it- and that says a lot. This meal is definitely in my meal rotation now.

Fudge Brownies I

I made 2 different brownie batches at the same time. 1 using chocolate squares, and the other unsweetened cocoa powder. This recipe gave a far better chocolate brownie taste. Good recipe, but I'll investigate others that also use chocolate squares.
