Pork Tenderloin Cubano with Mango Mojo

The sauce for this looks a little scary but it tastes excellent. I used hot salsa which gave it a great kick. I will definitely be making this again!

Italian Eggplant Salad

I didn't like this as is. The sugar was too much and it was rather bland. Next time I will only put maybe a third of the sugar and add some more spices.

Cherry Chicken Lettuce Wraps

I love these! I made them and portioned out the chicken into the servings and froze it. I thawed and ate them for lunch every day for a week and still think I could eat more. YUM!

Broiled Tilapia Parmesan

I thought that this was awesome! I cut back on the butter after reading another review and it worked out wonderfully. I also added old bay seasoning and used garlic powder instead of celery salt. I added some cayenne pepper in there because at my house we like the heat =)

BBQ NY Strip

I thought that this was an excellent marinade but my mother didn't like the worcestershire. I guess that's just a matter of taste though. So, if you don't care for that then leave it out or go for another recipe.

Black Beans, Corn, and Yellow Rice

I thought that this was pretty good as is. I think that I overcooked my rice though. I followed the package directions for that part so if I followed directions it probably would have been great. Definitely has to be made with the yellow rice or this would be bland!

There was way too much icing for this. I think that if I do it again I'm doing half of it. Also, the bread tastes mostly like the baking mix. Overall, this is just ok.

Restaurant-Style Chicken Tenderloins

These were just ok as is. A little bland. If I make them again I will probably add some seasoning to make them more flavorful. I even let them sit overnight and then froze and thawed them in the marinade...

Crunchy Oven Fried Tilapia

This was extremely bland as is. The crunch and texture is good though which is why I gave it a 4. Needs lots more spices added in to the breading and then it will be a 6!

Jimmbo's Garlic Knots

I liked the flavor of these but the process didn't seem to work. Next time I make them I will mix the oil, cheese, garlic, etc and then pour it over the knots without taking them out of the pan and then bake a little longer to melt the cheese. Also, there was no bake time for the knots and I believe it took me about 12 minutes to get them golden brown.
