Ricardo's Pizza Crust

Reviewed: Jul. 27, 2013
We use this recipe every time we make pizza. I bake it at 400 for 15 minutes to keep the crust on the softer side. Also, I butter the edges of the pizza after it comes out of the oven as it cools, to make it look and taste even better!

Darn Good Chicken

Reviewed: Apr. 21, 2008
Sooooo good! We barbequed this with the beer can method. Over indirect heat for 1hr20min. Turning and basting with marinade every 20 min. Saved some sauce for dipping. In making the sauce added 1/2 cup melted butter, and used a stone ground dijon mustard and classic yellow mustard ratio of 2:1. Also I decided to use the nutmeg, and I think this underlying tone make's the sauce.

Barbecue Ribs

Reviewed: Apr. 21, 2008
Amazing, must make these. I boiled them for 1hr. They were very spicy/hot for my taste, so next time we will cut the chile sauce by 1/2. We grilled then on a charcoal grill over indirect heat for 25, and direct heat for 5. We also basted with the sauce every 5 min.

Coconut Shrimp I

Reviewed: Apr. 21, 2008
The best...I use the freeze method to cut time. Also plan on straing the oil between batches to prevent burnt coconut sticking to them. I made a pina colada dipping sauce.

Taqueria Style Tacos - Carne Asada

Reviewed: Jun. 20, 2008
This marinade is awesome. Perfect flavor. Followed to a T. I even tried it on some chicken breast, and left them in it for 3 days (not intentionally) -- they were amazing too. I also made the salsa (half the chili amount), and used the cheese suggested...we love flour tortillas, so we warmed them up and added a slice of avocado inside (which gives a good creamy texture). Also the next night I stirred the leftover salsa into a dish with white rice, red beans, and sliced beef sausage ( also delish). Got to do it!!!

Mexican Baked Fish

Reviewed: Feb. 18, 2009
Really easy and good. I had to use salmon due to my husbands fish allergy (he can only eat some fish). It still tasted great. I served it with wild rice and veggies.

Asian Beef with Snow Peas

Reviewed: Feb. 18, 2009
This was really easy and really authentic tasting. I used beef chuck 7 bone pot roast due to a good deal at the market. It came out great. I would double the sauce next time though.
