Chicken Tortilla Soup I

This was really good. I did make some changes out of necessity. I didn't have any black beans so I used some chile beans undrained. Out of corn so I used a small can of mexicorn. I also added an extra can of broth and added a can of diced tomatoes. Because of the spiciness of the chile beans I reduced the amount of chile powder to about a teaspoon.

Slow Cooker Turkey Breast

Gave this 4 stars because it was very moist. The flavor however was not as good as a roasted turkey breast. I sent my husband to the store to buy the turkey breast and he said that they only had bone in 3-3.5 lb turkey breasts so he bought two of them. Well, since I had two 3 lb turkey breasts I decided to do a taste test. I used this recipe for one at 1 hour on high then 1.5 hours on low. The other I baked with salt, pepper, garlic, and poultry seasoning. The one that I baked was far more flavorful but a little on the dry side. The one that I used for the recipe here was very moist but the onion soup was not something that we liked on the turkey. If I make this again I will do something other than the onion soup.

Creamy Banana Bread

Pretty darn god as it reads. I thought that it could be a little sweeter and have a little more flavor. I will be making this again but I will probably making some slight changes due to preferences.

Tri-Tip Rub

Way too peppery!!! 2 Tablespoons is way too much. I doubted it as I read it but I really wanted to follow the recipe. I put it on the grill and it was so "cakey" with the rub that I decided to scrape some of it off. I am glad that I did. It was still pretty peppery even after all that. Don't think that I will be making this again.

Chocolate Chip Banana Bread II

It must have either been me or my baking powder because mine sank in the middle and browned too much on the outside. I will probably try again and reduce the temp and buy some new baking powder.

Sugar Cookie Frosting

This was my first attempt at making frosting and it was so easy and good. I was a little scared from the look of the sugar and shortening but once I put in the milk and vanilla it was right on. I divided the frosting up into three bowls and added food coloring. This was enough for all the cookies that I made, perfect amount. I used this on the best rolled sugar cookie recipe from this site and they were a hit. Thanks!

The Best Rolled Sugar Cookies

Wow these were great they were soft and sugary, just what a sugar cookie should be like. I made these for a play day with our kids and all the kids got to decorate three cookies. They were excellent and easy to make. I didn't have a roller so it took me a little longer to make them because i pressed the dough by hand but well worth it. I also used parchment paper and that made it really easy. I think that paper also helps them from sticking to the pan and also browns the bottom well. I used the "sugar cookie frosting" from this site too and went well together. Thanks!

Chicken Enchiladas II

This was great, rich, but great. I made in the afternoon and refrigerated until that evening for dinner. I used three diced chicken breasts and ended up being able to make 5 enchiladas total, which was way more than enough for hubby and I, they were very filling. I made rice and corn for sides.

Chicken Broth in a Slow Cooker

So I used a rotisserie chicken for the market and followed the recipe exactly except that I didn't have any celery, so I left that out. When it was finished I discarded all the chicken and veggies and I put the broth into a container and put into the fridge. The next day I took it out expecting the layer of fat to be at the top, but when I went to look it, the broth was all congealed.

Zesty Slow Cooker Chicken Barbecue

This was really good and super easy. I thought that it was yummy. Hubby didn't care for it. I served it on baked potatoes with cheese and sour cream I think that he may have liked it if I had served it on a bun as a sandwich.

Crustless Spinach Quiche

This was really good. My first quiche and it came out great. I brought this to a pot luck and every one wanted the recipe. I used sausage links that I crumbled up and then used a Tbsp of the grease to cook the onions and used a 1/2 can of diced green chiles. The only thing that I may cut back on next time is the amount of cheese. I used the three cups and used cheddar/jack combo and felt that it was just a tad too much. Update! I made again and didn't change anything but the cheese amount and type and was a hit also. I used a 2 cup bag of Mexican blend cheese.

Soft Oatmeal Cookies

Really, really good especially when warm. This made a ton of cookies, had to give some away to neighbors. Husband who doesn't really like oatmeal cookies, thought that these were great too. I didn't press the cookies down and added raisins.

Excellent!!! Looked just like the pictures and was fairly easy to make. Smelled so good while cooking I had to try. It was great even before the rice and cheese. Can't wait to make again. Thanks for this great recipe!

Breaded Chicken Fingers

Really Great, Made these tonight for company. I used my food saver to marinate these, which really helps the marinate get in the chicken. I also used panko Japanese style crumbs with a little extra seasoning.
