Baked Honey Mustard Chicken

Excellent! I didn't have time to cook it in the oven so I used a little oil and cooked in the frying pan. They were great. I marinaded in the pan and used about half the marinade in the frying pan to cook it. This one's a keeper!

French Breakfast Muffins

I didn't care for these much. I followed the recipe exactly. I'm glad that we tried them prior taking them to a breakfast potluck. Had to stop off at the store to pick up something else. They were dry and heavy.

Rick's Special Buttercream Frosting

Buttercream frosting is not really my favorite but this was good. Everyone liked and it was super easy to make and tasted great. I did use half butter and half crisco and creamed butter/crisco for 10 min.

Chunky Tomato Potato Soup

Way too much italian seasoning. I had to add a lot of chicken stock just to counter act the seasoning. We didn't like this much. The photos really make it look appealing but not so much in person.

Banana Oat Muffins

These are ok. Not very sweet even with the addition of chocolate chips. A word of advice....don't use paper liners if you sub applesauce for the oil. They stick like crazy.

Really good simple and easy. I just made regular size meatballs. I accidentally put the meatballs in before the broth boiled and they came apart slightly but overall was delish!

Zucchini and Shells

WOW WAAAAAYYY to much sugar! I love sugar and have a really big sweet tooth but gosh. Hubby said he could feel the diabetes starting. This was super easy to make and would have been really good except for the sugar. I served it with mini meatballs.

Layered Enchilada Bake

Not sure what happened, but tasted funky. Maybe too much chile powder. I used Bill Ehols taco seasoning instead of the taco bell version. What I did was to divide this into two meals. I used a 2 large round corrning-ware dishes which fit the tortillas exactly and made the three layers and repeated in the other casserole dish. One to cook now and the other to freeze. I also spread the sour cream on the tortilla first then layered the meat mix and cheese. Made it a lot easier to layer.
