Amazing Muffin Cups

As I'm counting calories, I did a slimmed down version. Used a low fat cheese and cut the quantity in half (was still plenty of cheese!). I also used a veggie sausage, zapped the bell peppers til softened before adding to the egg and also added summer savory to the egg mixture. Will use egg substitute next time. Man, these were good!

Cauliflower Salad

Not being a fan of potato salad myself...I was surprised that I liked this dish. I blanched the fresh cauliflower until desired tenderness. Served with pulled pork sandwiches. Everyone enjoyed.

Spicy Fisherman's Pie

This is my second time making it. Although I like the original recipe I like it better this time. I did use grouper instead of cod this time. That, I didn't like but other than that, I added peas and celery to the veggies and instead of adding the parsley and chili powder to the cream, I added Old Bay seasoning and a dash of nutmeg. I also browned some panko crumbs in butter and mixed in the cheese with the panko mixture and topped the potatoes. Overall I did prefer the way I made it this time around. Thanks Stripeland for the recipe. I never would have though to do this with fish.

The Best Red Enchilada Sauce

Wanted to use up the rest of a smoked brisket that my hubby had made over the weekend. This sauce made for the perfect enchiladas! Complimented the smokiness of the meat wonderfully! I've been making my own enchilada sauce since moving to South Florida. Never thought about using dried chiles. Thanks for the recipe Christine!

Sopapilla Cheesecake Pie

Easiest thing I've done in a long time and got so many rave reviews. Son made me promise not to take this to work (he wanted it all to himself) and also asked that I start making IT for his birthday instead of a cake. I thought it a bit rich (cut very small squares) but tasty. Made it exactly as directed. Had to bake 10 mins longer. Probably will bake about 15 mins longer next time. Very good though.

Oven Pancake with Apples

Excellent! I've made this several times as written. I've also made it and increased the apples and added brown sugar to the apple mixture. You just can't mess this one up, no matter what you do. So easy and so good! Thanks for sharing!

Potato Leek Soup III

Quick. Easy. Tasty. I am counting calories so I did only use 1/2 the butter and used 1% milk instead of heavy cream. The flavor of the leeks comes through nicely. It was delicious!

Garden Pasta Salad

I used Romano cheese and bottled Italian salad dressing, adding enough dressing to season until I was leaving for get together and then added more, as it had all been soaked up by pasta, and carried in a large zip loc bag. The cheese adds a salty flavor so be careful if you season. I cut grape tomatoes in half and also added broccoli florets and black olives to other veggies. Quick and easy. Loved it.

Buttery Cranberry Pie

Very good. I used filling as a cobbler instead of a pie. I made 2 cobblers (doubled the filling recipe). One was as recipe indicates and other I added sliced apples (2 apples). Family and friends enjoyed both. I will definitely make again.

Apricot Nectar Cake I

I was looking for a recipe to use some dried apricots that I had. I boiled them and then pureed them with the boiling liquid and that is what I used in place of the "nectar". I also added 1/4 cup of water to the mix. Easy recipe. Took to work. Everyone like the cake.

Blackberry Cobbler

Excellent cobbler! I had 3 different kinds of berries in my freezer that I was trying to figure out how to use and this was it. Absolutely delicious! I can see using many different types of fruit for this cobbler. I was a little put off when I read the recipe and saw that I had to roll out a dough but it was very easy dough to work with and I was done in a jif. I followed the recipe as is (except for using different berries) and thought it was perfect. Can't wait to try apples. Hopefully, someday (when I have some!), my own grandchildren will remember "MY" cobbler. Thanks for the recipe!
