Tiramisu II

I've made this twice. The first time, I used Trader Joe's lady fingers and it was excellent. The second time, I couldn't get the Trader Joe's kind so I used a different brand of lady fingers, which were much crispier and it wasn't as moist as the first time. I suggest doubling or even tripling the amount of coffee/rum mixture to really get the lady fingers soaked. I found it easier to put the first layer of lady fingers in the dish, then pour the coffee mixture over them, then do the marscapone and cream, then the next layer of lady fingers and again, pour the coffee over them. It kind of drenches the cream layers in the middle, which isn't a bad thing. It still looks pretty, but is much creamier. Also, definitely let it sit in the fridge overnight - it's much better after a day.

Chicken Pot Pie I

This recipe is so easy and very quick. I used cooked chicken from the store and frozen veggies instead of the canned ones to lower the sodium content. Otherwise, we loved this recipe.

Too Much Chocolate Cake

This cake was a hit. It's rich but not too heavy and the chocolate chips in the batter make each bite extra chocolatey. I followed the advice of another reviewer and used light sour cream, sugar free pudding mix and applesauce instead of oil. The cake was excellent and you'd never guess it wasn't the full fat/calorie version. I'll be making it again.

Cuban Black Beans II

This is an excellent recipe - cheap, easy, healthy and vegetarian. I used dried beans and soaked them over night, which worked fine. I found I had to cook the beans a little longer than suggested to get them tender, but otherwise, I made no changes. Next time, I may add some spices to give it more kick. This is a recipe that is worth making ahead. You need some time to soak and cook the beans anyway, plus a few days in the fridge really enhances the flavor. I'll be making this again!

Addictive Sweet Potato Burritos

These are excellent. The sweet and spicy flavors go well together and they are easy to make and super healthy. I will be making them again. One complaint: two cups of water seemed a bit much. It took awhile for the water to boil off so the beans could thicken back up and I'm not sure the result was much different than if I had used less water. I'll be trying that next time. Otherwise, a perfect recipe.

Curried Butternut Squash and Pear Soup

Wow! This soup is the perfect blend of sweet and spciy. It's filling as a dinner, but light enough to be an appetizer and its flavor is sophisticated but somehow, it would also make a great comfort food. I only made on change - adding a little extra curry powder because I like spicy food. I will be making this many more times!

Eggplant Parmesan II

This is a great, hearty winter recipe that's a nice alternative to lasagna or stuffed shells. It's easy to make, though a bit time consuming. A few suggestions: 1) You definitely don't need 3 eggplants - I used 2 and could have gotten away with 1 1/2. 2) You also don't need as much cheese - about half would have been fine for me, but I guess that depends how much cheese you like. 3) I sweated the eggplant for 30 minutes beforehand and it seemed to work well. 4) I also found that the eggplant needed longer cooking time - about 7 minutes per side to get it crispy and fully cooked. 5) And for best results, you want to slice the eggplant REALLY thinly. The recipe says that, but I didn't take it seriously enough. Overall, a very tasty recipe I will make again.

Creamy Rice Pudding

An easy and creamy rice pudding. I didn't bother using two different pots and it worked out fine. I may make this as a breakfast dish by taking out most of the sugar and adding fresh fruit.

Delicious Black Bean Burritos

If you're looking for a super-easy dinner that's ready in minutes, this is a great option. I skipped the jalepeno and used adobo chilis instead - they turned out great. I made a double batch and don't think it will be around for long!

Homemade Black Bean Veggie Burgers

I was pretty happy with the way these turned out. They were filling, tasty and super easy to make, plus I felt good about how healthy they were. My only complaint is that they're a little bland - next time, I'll be experimenting with more spices or flavors.

Carrot Cake III

The icing in on this is amazing - not too sweet, not too thick like cream cheese icing sometimes is. The cake came out a little tough and not as moist as I would have liked, but that may have been my own fault since I replaced some of the oil with applesauce. I'll be making it again without the replacement to see what happens.
