Grilled Lemon Herb Pork Chops

very good. Slightly strong lemon flavor. I did double the pepper and oregano just because my husband and I like a lot of spice. Will definitely make again!

Basil Cream Sauce

Yummy! Yummy! Yummy! I had a ton of basil from my garden I wasn't sure what to with, when I came across this recipe. Made it with no changes and is delicious!! Perfect on pasta!

Easy Roasted Red Pepper Hummus

So easy and SOOOOOO good! I added just a little splash more of lemon juice (personal preference) but otherwise kept as is. It was delicious with raw jicama slices! Will definitely go in the keeper file!

Blueberry Streusel Muffins

My hubby loves blueberry muffins and these looked easy to make and I had everything on hand. I do love to read previous reviewers and I was glad I did. I ended up adding the juice of 1 lemon to the batter as well as more sugar (2/3 c. total). I also added a little brown sugar to the streusel topping. These were hands down the MOST AMAZING blueberry muffins I have ever had! My husband actually got mad that I ate the last one! lol This will definitely go in the recipe book.

Creamy Chocolate Frosting

very easy and much lighter than I have tried in the past. It doesn't use as much butter as some other chocolate frosting recipes which gives it a lighter more spreadable consistency without any less of a a chocolate flavor!

Baked Scallops

This is amazing! I did like some reviewers suggested and melted the garlic with the butter in the oven for 3-5 minutes. Then I followed the recipe exactly. My husband ask me to make it again the next day!

Mama's Asian Chicken and Rice

This was excellent! I made the sauce exactly as listed but did only use 1 lb. of chicken. This left a little extra sauce for the rice and it was the perfect amount for 2 people! Also, I used on 2 t. of olive oil instead of 2 T. to cook the chicken and the extra calories and fat were not missed with all the flavor in this dish. Love it!

The Best Thai Curry-Peanut Sauce

This was AMAZING! I had some leftover noodles and I was craving some peanut sauce and I came across this recipe. I happened to have everything on hand. I converted the recipe to 8 servings and followed the instructions as is. The only change is I substituted juice of half a lime for the fish sauce. I put the sauce on the leftover noodles and it was so delicious I ended up making more noodles to finish the sauce!

Easy and Delicious Chicken and Rice Casserole

This was delicious with a few tweaks. I did cut up the chicken into smaller pieces based on some previous reviews. I seasoned them with salt and pepper and put in the pan first. Then I mixed all other ingredients together and poured over the chicken. Baked 1 hour, for the last 10 minutes I put some fresh grated parmesan over and a little bit of paprika which gave it a beautiful color at the end. Delicious!

Delicious, quick, and easy fudge frosting! I used sugar free hot fudge topping (that was what I had on hand) and it tasted wonderful.
