Chicken Wild Rice Soup I

Coq au Vin alla Italiana

I forgot to use the sausage we had on hand, and instead of legs/thighs, I used tenderloins, and decreased the cooking time. It was great! This is definitely a keeper. We served it with bread and just ate it as-is. We used Chianti and that was delicious (both in the dish and in our glasses!) - I'll be making this again for sure, especially to use up veggies from our CSA.

The Best Thai Peanut Sauce

Creamy Spinach Tortellini

I'm giving my recipe a 5 ;) I used this as a base, but adjusted the ingredients to be a little healthier and to our liking. I used fresh spinach and sauteed with the butter/olive oil and onion that i'd put thru the food processor. I added some garlic, and used canned chopped tomatoes w/ chilis. And, instead of cream cheese, I actually used 2 packets of knorr sauces - Alfredo, and Pesto. The only thing I'd recommend watching out for that I always goof is letting the tortellini cook too much - the heat of the sauces gives it a little extra cooking time and half the time i make this, they break. My fault! :)

Tomato Basil Salmon

Pretty tasty! I followed the recipe pretty closely, except I had cherry tomatoes that i sliced thinly and layered on the top. I did what a few others did and put in @ 375 for 10 ish minutes, then let it broil for the rest. I like the little crisp it gives the outside of the salmon. The inside was very moist and delicious. I'd definitelymake again - easy and tasty.

MMMMM... Brownies

Soooo tasty! This was my first shot at making brownies from scratch, and not from a little red box. They were a big hit! I used half semi sweet chocolate chips, and half Hershey's Special Dark. They were so rich, and I served them warm w/ ice cream. I will definitely use this recipe exclusively in the future when making brownies. Thanks!

Best Broccoli Soup

I really enjoyed this soup. The ony thing I did differently was add more frozen veggies for more color and flavor. It was definitely very filling and healthy! I made garlic bread for dipping, too. I will definitely be making this again!
