Taco Lasagna

Love this recipe. Easy and fast to make. Very kid friendly and they love to help put it together, too. I use the corn tortillas that were already crisped and use lean turkey burger instead of beef. I also add a can of drained black beans to the beef for additional nutrients.

Rich and Creamy Tomato Basil Soup

I used can diced tomatoes and whole milk. I did not have heavy cream, but everyone loved it and wants it for dinner again tonight. I imagine had I used the ingredients that the recipe called for, my kids would not only be begging for more like they are now, but they may experience withdrawal symptoms. Really a great recipe and a keeper. Thanks. SECOND REVIEW: This time I added per the advice of a reviewer, cooked bacon and bacon grease. FABULOUS! Cooked with the bacon makes this soup very hearty and perfect for a colder weather soup. Both ways are excellent.

Homemade Black Bean Veggie Burgers

Just made these for dinner. TERRIFIC! Best black bean burger recipe by far. Just press the onions and green peppers into the sieve to release the juices. I followed the recipe step by step. I will make again. Yummy.

Quick and Easy Pizza Crust

It was good, but I think I may have cooked it too long. My oven settings seem to be off quite a bit (an old stove). I made two mexican pizzas; I added fresh cilantro and fresh garlic to one, and the other I added taco spices. My kids loved them and my oldest daughter said that every pizza place should make this exact pizza. I changed it to five stars because I figured out a way to make the crust very similar to popular chain pizzeria's. I preheat the oven to 350 degrees. I leave about two inches of crust plain all the way around and then I brush olive oil with melted butter on the plain part of the crust, place in oven for about 8-10 minutes. REbrush the plain part of crust and place in oven for another 8-10 minutes. I've done this many times and it works every time.

Melt-In-Your-Mouth Meat Loaf

PERFECT base recipe. The texture and moisture are perfect. I add more herbs and spices to mine. I can see where some would think this recipe is bland, but you can always add more seasoning.

Whole Wheat Sweet Potato Muffins

Yummy and healthy! I replaced 1 cup of flour with 1 cup ground up oatmeal. I took the advice of other reviewers and used 3/4 cup honey. Used apple sauce instead of oil. I also let it sit for about 30 minutes after all ingredients were mixed together. I did not make the topping. I also used a fairly large sweet potato (6-7 inches). Makes a great breakfast muffin with a glass of milk or juice to top it off.

Spinach Stuffed Chicken Breasts

These were so delish! I'm making them again. I made 12 stuffed breasts and wrapped them individually for freezing. They're perfect for my husband to take to work when frozen and he can heat them in the microwave on his lunch. My kids liked them better than most chicken dishes.

Cha Cha's White Chicken Chili

Cooked unsoaked beans in a pressure cooker first and then added everything else. I did not add the jalapeños--my kids would not have eaten it. But I added about 9 cloves of garlic. I did not have oregano so I used thyme instead. Super delicious dish. Will be making this again. Thanks.

Scrambled Egg Muffins

I used bacon instead of sausage, finely chopped colored peppers instead of just green, 1/4 cup dried minced onions instead of the raw onion, 1 cup cottage cheese instead of the shredded cheese. We love this recipe. Making it again tomorrow.

Black-Eyed Pea Gumbo

I used my pressure cooker to first cook unsoaked black eyed peas. I used my smaller pressure cooker to cook hot Italian sausage. Added about 5-6 large cloves of garlic, and I omitted the brown rice. Excellent dish. Kids thought it was a tad spicy, but they ate it anyway. Can't wait to make it again.

No Bake Chocolate Oat Bars

Everyone I know who has tried these, love these. I love them. They're addicting. If you cook the chocolate chips to almost burnt, you will create a cappuccino type flavor, which was a big hit.

Corn Dog Muffins

I used one 18oz. box of organic corn bread mix--store brand. Used the recommended amount of eggs, milk, and sugar. Instead of using an entire package of hot dogs, I used six nitrate free hot dogs. Sliced the hot dogs in half length-wise and sliced into smaller pieces. Even I liked these and I don't eat hot dogs. My kids love them for school lunches. Also great for kid parties. Definitely a keeper. Thanks so much for this wonderful recipe.

Delicious Black Bean Burritos

Very tasty and healthy. I did not have onion, so I had to use scallions, and I only had dried cilantro. I used my banana peppers from our garden instead of jalapenos. I added Mexican chili powder to spice it up a bit more. I used more colored peppers than called for because we love peppers. Instead of white tortillas I used a high fiber/protein tortilla. The recipe made enough for seconds for all four of us. Will be making these again. Thanks.
