Cajun Style Meatloaf

I really liked this recipe. I had to change a couple of things due to ingredients on hand. I used 2% milk and italian sausage. I didn't have any nutmeg and I don't like green peppers so I left them out. I had 2.5 pounds of meat thawed so I used it all and the amount worked well for a 9x13 pan. I increased the amount of spices but not by a huge amount. I can imagine this would have been too spicy if I had done the math correctly. It had a great flavor and not too much of a difference from regular meatloaf but enough to make it interesting. I served it with garlic mashed potatoes. My husband really liked it too. I will definitely be making this again.

Florentine Artichoke Dip

I brought this to a party this weekend and received rave reviews! I sprinkled extra parmesan on top to melt during baking and served it with sesame melba toast crackers. I will be serving it at a party this weekend too. Yummm.

Unbelievable Grilled Garlic Bread

This is good but itisn't worth the extra fat, calories and cholesterol. Try using olive oil and minced garlic only for great flavor and fewer fat grams.

Asparagus and Ravioli with Dijon Alfredo Sauce

My husband and I both liked this recipe. I cut the mustard in half as recommended and it turned out well. This would be a nice dish for a dinner party or romantic evening-easy and quick to prepare yet elegant.Good for vegetarians. Serve with a nice salad and wine.

Artichoke Rice Salad

I am glad I read the reviews before i made this. I used half of the mayo and doubled the curry. I don't like green peppers so I used a red pepper instead. The taste improves every hour that it is cooling in the refrigerator. I added pine nuts (pignolia) and it made all the difference. It really added some nutty flavor. Yummm!

Chile Verde Enchiladas

These were pretty good. I thought the onions and peppers should have been cut into smaller pieces and the green sauce could be added right out of the can instead of thickening. My husband really liked them.

Alysia's Basic Meat Lasagna

This was very good. I made a couple of changes. I only used fresh garlic and I sauteed the garlic and onions and then added the jarred sauce. I added some red wine and fresh basil to that for better flavor.

Single Crust Peach Pie

This pie was very good. I seldom bake but got the urge when my neighbor gave me some peaches from his tree. It was easy to prepare. Just make sure you drain the peaches in a large colander so that each peach gets drained.

Ground Beef Shepherd's Pie

I agree with the others that say this recipe needs salt and pepper. I wish I had thought of worchester sauce also. I added green onions and sweet chili peppers (mild) and it still needed more flavor. I would also add more potatoes.

Spicy Peanut Chicken

This was a good recipe but I found myself having to add more of every spice. It didn't have enough flavor at first. I basically doubled the sauce and it came out flavorful. I served it with snow peas over rice.

Maria's Stuffed Chicken Breasts

This is a good receipe and would be appropriate for a dinner party, served with penne pasta. I made my own sauce though which included stewed tomatoes, tomatoe paste, olive oil, red wine, red pepper flakes, basil, oregano and garlic. I think that would solve the problem of 'lacking spice' that others mentioned. The jarred sauces never have enough flavor.

Chicken Mole

I really liked this recipe. I used chicken breasts without the skin. Next time I will roll them in between two sheets of wax paper to make them thinner so it will cook faster in the middle and not dry out. The sauce was great. I subsituted ordinary chili powder with diced authentic pasilla negro chili pods. Yum!

Orzo with Mushrooms and Walnuts

Since my husband doesn't like walnuts, I substituted pine nuts and sauteed them with the onions. Very good and great with an italian chicken dish!
