Chicken Pot Pie VIII

Love this chicken pot pie! Having said that, I have learned to parboil my celery, carrots and potatoes. No matter how small you chop them, they are still crunchy if you don't. Also, I usually use a store bought crust, just don't have the time/desire to make my own most of the time. Finally, to cut down a bit on fat, I will just use a top crust sometimes too. Just made one with some leftover turkey I had frozen and it was DELISH!

Butternut Squash Fries

These are a great idea for kids and grown ups alike. I've been doing "faux fries" for awhile and have found that the best way to get that crispiness you are looking for is to first toss them in a small amount of evoo, cook them a little shorter time than called for, then broil them for the last 3-5 minutes. You'll have to experiment with the thickness you cut, the time you cook and your own oven temps, but a few times and you should find the right mix so that they come out soft on the inside and crispy out. I move alot, so I have to play with the mix with each new oven. Don't put too much oil on, it won't help! Also, don't crowd the pan or everything ends up getting steamed instead of "faux fried". Blueberry Muffins

I thought the texture on these muffins was absolutely perfect! They are not as sweet as most muffins, which was OK for me, but I may add a little sugar on top next time to kick up the sweetness a bit. If you are looking for a super sweet muffin like in a pastry shop, you probably won't like this, but if you want a muffin with divine texture and medium sweetness, then this is the muffin for you! I also liked that I had all the ingredients on hand. Muffins were great the next day too! Would make again, with a little sugar on top.

Baked Zucchini

This was OK, though I would cut the filling by about half. It is something different for veggies and I have a husband who is eating low carb, so I will probably make this occasionally when we need something different, but I wouldn't call it a favorite.

Bacon Turnip Mash

This was not a hit with us, though it may be more because we are not huge turnip fans. My husband and I both felt there was too much bacon grease. I tried it because my husband is doing low carb and I'm trying to get creative with veggies, but I won't be making this again.

Stuffed Zucchini

My husband and I both really enjoyed this recipe. I used sweet Italian basil sausage and it was great! (I had to but Johnsonville sausages and then take the sausage out of the casings, since WalMart didn't carry regular italian sausage) What a great alternative to stuffed peppers! I think next time I am going to try turkey italian sausage, since I am doing Weight Watchers and my husband low carb, to make it good for both of us. I'll let you know how it goes!

Microwave Oven Peanut Brittle

I've made this for the past 2 years and always get rave reviews and recipe requests. When I tell people how easy it is, they don't believe me. Here's a quick tip - I always mix single batches in a 4 cup glass measuring cup so that it's much easier to pour out when it's done.UPDATE: OK, I've now been making this for 7 years, and still get RAVES every time. People still don't believe me that is is super easy, so I'm considering just telling them it is really complicated and they shouldn't try it. See, I give it out at Christmas time to neighbors and friends, and then they'll think I worked really hard. In the end, everybody's happy!

Chocolate Mousse Pie

This pie didn't get rave reviews like many other highly rated pies I've made from this site. It was pretty rich for our taste, but that may be the problem - we don't really like very rich desserts. Also, I'm not sure I did well with folding in the egg whites. I guess my overall review would be - if you like rich chocolate pie, then give it a try!

Squash Stuffed Chicken Breasts

I made this recipe because I had some produce I needed to use and this recipe exactly matched what I had (other than the green pepper, which I don't really like anyway). I enjoyed it, and my husband thought it was pretty good, though he ate 2 breasts. I definitely will cut down on the onions next time, and I will make sure I cook the stuffing longer because the onions were still pretty strong. Overall, though, I thought it was a great different recipe that adds a little variety to what we typically eat. Thanks!

Slow Cooker Stuffing

I made this for Thanksgiving for the first time because we go to a football game right in the middle of the day and this recipe was so convenient for the timing. It made it so easy, because I chopped everything up the day before and measured my spices so all I had to do before I left for the game was throw it in the crock pot and mix it up. When we got back from the game, the house smelled wonderful! And the taste was awesome! I had added too much broth so I added some Stove Top chicken stuffing to get it to the right consistency. Next time I will make sure I have that on hand again as it is great insurance in case I get too crazy with the broth. This is a tasty and easy recipe. Thanks!

Cranberry Pork Roast

I made this recipe exactly as indicated and thought it was awesome! Incredibly juicy and tasty. Though I think some of the others suggestions would also taste good, I have to say I was mightily impressed with the original recipe. I highly recommend this, especially in the fall!

Best Big, Fat, Chewy Chocolate Chip Cookie

Every time I make this recipe, I tell myself I'll never make Tollhouse again, these are so awesome! Everyone I've ever made them for just raves. They are rich, but I like that because just 1 seems to do it for me, rather than 15! If you don't like a lot of chocolate, then you may want to reduce the amount of choc. chips slightly. I like them just how they are, but my husband, who wants to eat several at a time, likes me to make them with a little less chocolate. Regardless, this is a great recipe! New twist I've made with this is to use Ghirardelli bittersweet chocolate chips - really tasty!

Basil Shrimp

I can't say enouugh about this recipe! Both my husband and I loved it, and I can't wait to make it again. Next time I am going to make extra marinade, hold some to the side and toss it it in some pasta and top it off with the prepared shrimp. This was great, thanks so much!

Brown Family's Favorite Pumpkin Pie

This was a huge hit at our Christmas dinner! I was a little worried about how the light consistency of the pumpkin portion would go over, but everyone else said they loved that about it. It's really the topping that makes the difference though. It will be on our Thanksgiving menu for sure. UPDATE: I have been making this recipe for almost 2.5 years now and I just at Christmas finally stopped buying a regular pumpkin pie in case somebody wanted it because it was never touched! From now on, I make this pie and this pie only!

Best Bruschetta Ever

This bruschetta is dangerous! I have to force myself to share or else nobody will get any. We entertain quite a bit, and this has become a standing requirement by our guests. It's easy, it's fresh and it's a relatively healthy way to snack. UPDATE: I've been making this for a few years now and here are my recommendations...only use roma tomatoes, the flavor is always good; use fresh basil and use 3 times the amount of dried called for in the recipe, it makes a great difference! Also, if possible, use fresh grated parmesan, it also makes a difference. I still do the recipe exactly if I don't have the fresh counterparts, but using the fresh makes a great recipe even better!

Broccoli Chicken Casserole I

My husband and I both really liked this recipe, even though I'm not much for casseroles. I did make a few changes based on other's suggestions...added onion salt and garliv to the soup/mayo mix and prepared the stuffing with 1/2 the water it called for before sprinkling it on top (not too wet, not too dry). Will definitely have it again!
