Hungarian Flourless Hazelnut Cake

Wow, delicious! I needed a flour-free cake for a birthday and this is delicious. Light and fluffy. I doubled the recipe and made two dozen cupcakes (they take a while to bake - maybe half an hour) and a small cake. Will top with whipped cream as suggested, but I also like the idea of nutella. I accidentally turned the egg whites into the egg yolks, then after realizing what I did folded in the nuts. It's very sweet and light. I will definitely make this again.

Applesauce Cake V

Delicious. Made into cupcakes with spiced organic apple sauce instead of spices + sauce, and used honey for 1/4 of the sugar content. has some local organic pasty flour, and used local farm fresh eggs. omitted nuts and raisins. going to make a little drizzle glaze to put on the top. cooking time aprox 15 min as cupcakes. ...and boy are they good.

Cheddar, Potato and Bacon Chowder

I improvised a little, added more potatoes, used water instead of chicken stock with rapunzzel boullion, used mexican cheese, and it looked totally funky, BUT it was delicious, I ate four bowls, and my uber-picky daughter (with food sensory issues) had two bowls! will definitely be making this again! probably weekly

Peanut Butter Playdough

I made it with one cup confectioners sugar and one cup natural peanut butter and it's the perfect amount for my one child to have plenty to eat and play with.

Sugar Cookie Cutouts

These are the best sugar cookies I've ever made. I could taste the cream and that I think makes all the difference. Very easy to work with, even working with two toddlers, whom inevitably handled the dough enough to make it very soft. They cooked up perfectly, even with different sized cookie cutters, came clean off the pan with and without cooking spray (I forgot on the first batch and was a bit nervous), and were so delicious! We sprinkled colored sugar on some and cinnamon sugar on others, and both were great! I'll be making these for chrismas gifts this year for sure! I made up a half batch, but I'll easily make a few batches again before the holidays.

Chocolate Chip Banana Bread II

I loved this recipe, so did my picky 4 year old who won't eat any sweet breads without chocolate chips. I opted for butter instead of shortening, to make it trans fat free, used half brown and half white sugar and omited the walnuts. It was the best banana bread I've ever eaten! Definitely a keeper!

Mom's Zucchini Bread

I made this recipe cut down for 8 servings, because it was for only two people. It was great! I didn't have nuts, and probably should have cut the sugar back a bit for that reason, but it was really good. It had a strong cinnamon flavor which we liked. 1/3 of the original recipe without nuts fits just right into 6 muffin cups, and took about 25 minutes to cook at 350 degress.

Honey Cake III

I made this for my class of 18 5-7 year old, with leftover cranberry-apple zinger tea instead of orange juice, and it was great! Made it with half whole wheat and half whole spelt flour, as well as olive oil instead of butter, and all honey because we were out of sugar. My lead teacher was quite impressed with it!

Best Moist Chocolate Cake

I made this recipe for my class of 18 5-7 year olds and they all loved it, as well as the faculty that got to try it. I made it with olive oil instead of margarine/butter, and aprox. 2/3 honey 1/3 sugar in place of sugar. It was fantastic! Also, I used half whole wheat pastry four and half whole spelt flour. They kids really helped me make it so I didn't follow the recipe exactly, but came pretty close except for my changed, due to what we had in stock. It was great, and I'll definitley make it again!

Good Old Fashioned Pancakes

I used white whole wheat flour, substituted honey for sugar, and a ripe banana for the egg, and I added a dash of cinnamon and these were the best pancakes I've had in years! The batter was a little thick, which made them very fluffy once cooked. Terrific!
