Fluffy Swedish Pancakes

Hubs savored one bite and said "Happy Dance, Happy Dance!" I served them with peaches in syrup. As another reviewer cautioned, I did reduce the butter to 1/4 cup. It was plenty, and they were still buttery. Besides, you'll be adding more butter to the pan. They were sweet and fluffy, just as promised.

Rosemary Smashed Potatoes

This reminded me of the stuffing in a twice-baked potato, except more savory due to the addition of rosemary. It got rave reviews from my guests. This was the perfect accompaniment to the grilled tri-tip roast and tossed green salad I served. It seemed a bit on the dry side when I culminated all of the ingredients. With the addition of some half and half it was perfect. I realize this recipe is sponsored. However I agree with another reviewer that you don't need to use the oven bag to achieve the same results. You can wrap the potatoes in foil or place in an ovenproof dish. This was very good. I will definitely be making this again!

Janine's Best Banana Bread

Being a banana bread purist, I really loved this recipe. The texture on the inside was moist and dense. The outer crust baked to a beautiful golden brown with a slight rise in the center. I'm not sure why anyone would "slice" the bananas unless you want those chunks in it which would alter the outcome. I mashed mine. I also added an additional egg and one teaspoon of vanilla to the recipe. Next time I make this I'm going to add a 1/2 cup of chopped pecans and a 1/2 cup of Craisins. This is a keeper!

Herbed Scalloped Potatoes and Onions

In the past I've not had great success with scalloped potatoes. I used four large potatoes instead of five as I was concerned they would be too dry considering the ratio of potatoes and sauce. The only other change was that I used my trusty freeze dried chives instead of fresh. This dish turned out fabulous and worthy of serving at a formal dinner get together.

Terry's Texas Pinto Beans

Very much like the one's I've made for years. These had a special kick with the green salsa. The ingredients were balanced quite well. Not too mild, not too hot. A great standard for those who love pinto beans!

One Minute Chocolate Icing

The end result of this icing was absolutely perfect. I made it to top off the Tiramisu Cheesecake (also on this AR site) that had chilled in the fridge for a few hours. It spread perfectly to the edges, and set up nicely. You can obviously adjust the amount of milk to suit the consistency you're looking for. Next time, I might try a liqueur in place of the vanilla.

New Potatoes with Caper Sauce

The buttery tang from the sauce is divine! This was an easy and different way to prepare new potatoes. The capers gave the dish that extra zing! They were the perfect accompaniment to the tri-tip roast I served for company.

Mexican Style Shredded Pork

The chipotle sauce makes this dish a success. Hubs poked one fork into the pot before serving and said "This is the best pork you've ever made!" He couldn't resist grazing from the pot each time my back was turned. So incredibly simple with savory results. I served it on a bed of spanish yellow rice to which I added the cilantro. Topped it all off with shredded cheese, a dollop of guacamole, and a warm flour tortilla on the side. Muy bueno!

Kentucky Biscuits

These were classic biscuits. They rose high and the texture was perfect. The flavor was excellent, I think due to the addition of sugar. I will admit that I ventured from the suggested method of leaving the dough together scored in the pan. The dough had such a beautiful elasticity that I couldn't help resist using a biscuit cutter to separate. This is my new go-to recipe when making homemade biscuits.

Classic Waffles

A nice Sunday treat! The waffles were a perfect texture (not sure if it was because of the recipe or the waffle maker). This is truly a classic waffle. Add some fruit, a pat of butter, a sprinkle of powdered sugar, and a drizzle of maple syrup. You will have smiles all around the table!

Strawberry Cream Salad

This unique meringue base is one to try! It's like one of those Italian meringue cookies, only an entire layer in the bottom of the pan. I used coarsely chopped club crackers and pecans incorporated into the whipped egg whites. Be gentle when adding the cream cheese layer as the base is very delicate and could collapse easily. We absolutely loved this version of a strawberry cream salad. It's so much better the next day, and the day after! Definitely a keeper. Will be great to take to potlucks.

Chicken Lasagna Alfredo

This is a nice departure from traditional lasagna. Add some herbs and seasonings to suit your taste, as it is a little bland as written. Made a loaf of Jo's Rosemary Bread to go along with it, also on this site. Add a green salad and you have a very nice meal.

Berry Crumb Bars

At first I thought these might crumble and fall apart. They baked beautifully. The recipe is just fine as written. I always keep a big bag of frozen berries from the large warehouse store in my freezer. The raspberries, blueberries, and boysenberries made for a perfect filling. To error on the sweet side, I sprinkled a bit more granulated sugar over the berries once they were spread evenly over the crust. The bake time was perfect for a light golden topping. Delicious!

Slow Cooker Chicken Taco Soup

Since this was a late in the day afterthought, I made this in a pot on top of the stove and it turned out great. Super easy. I cut the breasts up in small chunks and sauteed them with onion and crushed garlic, then added the rest of the ingredients. Delicious!

Best Bread Machine Bread

If you want a basic, bakery style white bread then this is the one to try. This was not the first time I have placed the yeast in the water before adding the other ingredients. No problems with rising at all. Perfect texture on the inside, flaky crust on the outside. Will make again and again.

Sweet Restaurant Slaw

It doesn't get any easier than this! Simple to put together. This is a good, basic recipe. I didn't have poppy seeds on hand, which in my opinion had no effect on the flavor. Next time I'll add some diced pineapple to make it a little more interesting. Definitely a keeper.

Chicken Enchiladas II

Since I tend to have the ingredients always on hand, I like to make these with leftover chicken. It's a great enchilada casserole that family and friends love. However, if you're wanting "authentic", look elsewhere.

Secret Burger Sauce

This is a classic burger sauce from the famous chain that is now a part of history. No need for the black pepper, but that's personal preference. If you don't want to go to the time of chopping the pickles, a nice relish will do perfectly. You can't go wrong, and will never buy it from a bottle again.

Chicken Piccata with Artichoke Hearts

This was a delicious recipe given I baked the chicken. In an attempt to reduce the amount of fat in this dish, I strayed from the dredging and frying part. Because I didn't fry the chicken, I had to add some cornstarch to the sauce as a thickening agent. I used all of the seasonings and other ingredients as outlined in this recipe. Hubs loved the melding of flavors. For that it deserves five stars!
