Cube Steak Parmesan

Reviewed: Jul. 17, 2010
I will definitely make this again! For the sake of time, I used what I had on hand. I did as others suggested and used seasoned bread crumbs instead of the cracker mixture and substituted jarred spaghetti sauce for the tomato sauce mixture. The end result was very tasty and a good alternative recipe for cube steak!

Best Brownies

Reviewed: Jul. 17, 2010
This recipe was good. I agree with other posters that the most important aspect of this recipe is to NOT over-beat! If you follow the recipe as written and mix the brownies in the pan that you melt the butter in, you will be just fine. It takes just a couple of minutes to mix these up with a wooden spoon. With that said, I only gave the recipe 4 stars because I thought there was a lack of richness/depth of flavor. Perhaps the ratio of sugar to cocoa was off. Next time I will add more cocoa and will update my review.

Oaty Cereal Bars

Reviewed: Jul. 12, 2010
I followed other reviews and substituted/added other ingredients (almonds, raisins), increased boil time to 2 minutes, and doubled the recipe. I had to end up cutting into 24 squares to reach a size my kids could finish at one sitting. Next time, I will feel comfortable using healthier cereal because the recipe is sweet enough without added sugar. Great recipe, thank you! These are our new school day breakfast bar! UPDATE: I made this recipe again and decided to try a 9x13 pan on a single recipe since the double recipe made a lot. I used Cheerios and all ingredients at the amount suggested and it did not make enough to fill the pan. I will now use an 8" for a single batch and 9x13 for a double.

Winter Blossom's Often Requested Ham Salad

Reviewed: Jul. 6, 2010
I have to admit that I had never even tried ham salad prior to making this recipe. I had to serve a large crowd and didn't have enough chicken for chicken salad, but had leftover ham. I stumbled across this recipe and decided to give it a shot. It is surprisingly good! I ended up just chopping up pickles since I didn't have relish. The consistency was fine, but the juice made it a little salty. I would recommend drying them in a paper towel if you go this route. Thanks, Winter Blossom!

Jay's Signature Pizza Crust

A fantastic quick recipe! I have made this numerous times and it turns out well each time. Sometimes I add some extras, sometimes not. The recipe AS WRITTEN is fantastic!

Oven Fries

Reviewed: May 7, 2010
I was surprised how poorly these turned out given most of the reviews? I don't think I will attempt them again, but if so, I will definitely cut them thicker and leave the skin on.

Sugar Coated Pecans

Reviewed: Dec. 26, 2009
These were a HIT with my family of nut fans. I tweaked the recipe a little and added 1 tsp of fresh nutmeg and 1/4 teaspoon cayenne. Without those additions, the recipe would only be 4 stars, but with them, they were a 5!

Creamy Chicken and Wild Rice Soup

Reviewed: Dec. 17, 2009
Very yummy soup. At others' suggestions, I added celery and carrots. In hind-sight, I would cook them with the chicken for flavor, but leave them out of the soup. I substituted a tablespoon for bacon grease 1 T of butter. Another poster had mentioned they used Rice-A-Roni instead of Uncle Ben's. One important thing to note (and I didn't until it was too late) is that the seasoning packet has the wild rice, which takes much longer to cook. I had to fish it out and cook the soup longer to compensate of the lack of cooking time. Will make it again, but will probably replace at least some of the cream b/c this recipe has got to be a KILLER in calories!

Not quite my taste. Not gooey enough for what I expect a cobbler to be.

Pesto Cheesy Chicken Rolls

Reviewed: Oct. 6, 2008
Great simple recipe! I incorporated some suggestions from others. The egg/breadcrumb finish really helps to keep the moisture in.

Ham and Potatoes Au Gratin

Reviewed: Sep. 2, 2008
I've been making this recipe for a while now and my family loves it. Like others, I have had to bake it longer than stated to get the potatoes done to my liking, but it is YUMMY! This is easily transformed into soup by adding 1-2 cups of milk at the end. I will often make soup with our leftovers!
