Blueberry Snack Bars

Your kidding, right? Not enough batter to spread in a jelly pan. Tried in a 9 x 13. One hour later it is STILL baking. Center will not set. If it ever finishes it will be too late for the party.

Brown Sugar Meatloaf

Add me to the chorus of believers - this rocked! I made it in a mini loaf pan and got 4 small loaves. My only sub was using almond milk instead of dairy and oops, I didn't measure the ginger and probably used twice what was called for. A winner .... so much so that the pickiest of child eaters asked for seconds and thirds.

Baked Eggs

VERY easy and a big hit! I had to use moz. cheese instead of the cheddar and it made it nice and mellow. I also reduced the number of egg yolks by half and it still turned out great.

Carol's Chicken Salad

Terrific! A huge hit at my dinner party. We didn't put the celery or chicken into the salad (served on the side) and it was still terrific. A real keeper!

Fruited Curry Chicken Salad

Japanese Chicken Wings

Loved it! I changed a lot (like using cut up bone/skinless breasts instead of wings) and lightly frying in very little olive oil. Once breasts were cooked I added the rest of the mixture to the skillet and simmered for about 30 minutes. The longer you simmer the thicker the sauce gets. We served this on lettuce for a chicken salad. The sauce was so good, as a dressing, that my husband wants this to be in the weekly rotation of recipes! Thanks!
