Swiss Chicken Casserole I

added 1/2 frozen spinach to the bottom of the pan, and replaced the milk with white wine. you would think this recipe was much more difficult based on how delicious it tastes!

Chocolate Chip Cheese Ball

big hit at the party i took this to. the brown sugar gave it a bit of a gritty taste, so i'm going to try dissolving it in ~1T of melted butter next time to smooth it out.

Pesto Chicken Florentine

i used pre-made alfredo sauce, but this is a favorite. i sometimes add toasted pine nuts or sun dried tomatoes, depending on what i have in the cupboards.

i've never done anything like this before, but i took a risk and tried this with fresh poblano chiles (just following the recipe), and it was relatively simple and amazing! the mexican produce boy was impressed when i went back the next time for some poblanos and proudly announced that i was making chiles rellenos from scratch! =)

Sweet Corn Tomalito

just like chevy's! i cut down the butter to make it healthier. i found that steaming this in a pie pan over a large soup pot allowed for the most even cooking.

Chicken and Bacon Shish Kabobs

i had a meat skewer and a vegetable skewer as well, which worked out great--each was able to cook just the right amount of time. we found that parts of the bacon that weren't exposed to the flame really didn't cook much at all, so next time i'm going to pan fry the bacon for a few minutes before wrapping the chicken to be on the safe side

VERY high in fat, so i cut the mayo, used a lean cut of beef and omitted the butter. still tasted wonderful and hearty!

Pumpkin Pancakes

not the "pancake circus" style from nashville, TN i was hoping to emulate, but very moist and good. i topped them with cinnamon cream butter(mixed all together myself to taste), and they were great!

Best Carolina BBQ Meat Sauce

i cut the mustard down to 3/4 cup and added 1/4 cup honey to take off the edge of what i knew would be a tangy sauce. cooked boneless, skinless chicken breasts in the crock pot with the sauce, and my husband loved it! we recently moved to north carolina, and this sauce stands up to what we've had in the highest-recommended diners here!

Bourbon Street New York Strip Steak

This was my first time cooking a steak, but it turned out wonderfully! My steak was thick, so it took longer to grill than the recipe called for. My husband was shocked by the sweetness when he took his first bite, but he ended up loving it!

Spinach and Potato Frittata

This was pretty good, but I will be making some changes the next time I make it. Potatoes are best if sliced thin, but they only take about 8ish minutes to cook. Reduce the amount of olive oil you cook it in, and increase spinach and cheese if you don't want the potatoes to overpower it too much.

Tres Leches (Milk Cake)

This is delicious! I would follow the other recommendation of increasing the condensed milk though, as it could stand to be a little bit sweeter. I made many cuts into the cake and allowed the milk to soak in over night. It was great.

Cheesy Ham and Hash Brown Casserole

I did not like this--I can't believe how high it's rated! It come out more like a soup than a casserole, and is too salty. I had to soak my dish overnight to be able to scrape everything off the inside. I do not recommend this dish.

Chicken and Cheese Stuffed Jumbo Shells

WONDERFUL!! Used spaghetti sauce instead of the tomatoe sauce, and added extra mozzerella. No problems with my non-stick frying pan. Definitely worth the work--Loved it!
