Best Ever Blueberry Cobbler

This cobbler is excellent! I made it the first time with 1/2 fresh strawberries and 1/2 fresh blueberries. This time I am trying with fresh marion berries. Great recipe!

Shredded Brussels Sprouts

I made these for Christmas Eve dinner this year and they were a hit! My mom who claimed to HATE brussels sprouts had two helpings! This recipe is fantastic! I really love roasting brussels sprouts in the oven with garlic and olive oil but I'd never tried them prepared in a skillet. So easy and quick! Pairing them with the rich flavors of the bacon was amazing! Many thanks for this recipe! Its going on my "to make again" list!

Buttermilk Pancakes II

I made these for mothers day brunch and they were such a hit! Note: I added the melted butter to the mixture with the buttermilk and because the buttermilk was so cold, the butter became solid again and created little chunks in the batter. I panicked a bit but went with it. If this happens to you, don't worry, keep rollin and they will turn out fab! The next time I host a breakfast or lunch I'll make these for sure!

Authentic Thai Coconut Soup

I wanted to like this. I really really wanted to like this. But I didn't! I thought there was too much lime juice. Quite a lot of work and not worth it in my opinion. However, my husband liked it so thats why I gave it three stars.

Easy Morning Glory Muffins

Easy? Well I wouldn't say the name is completly accruate. My arm was aching from all the grating required for this recipe... But I can tell you it was COMPLETELY worth it! The muffins came out delicious and moist! I love the addition of the coconut and carrots! This is not the kind of thing you feel guilty about eating or serving to your family. So healthy! After reading the other reviews I opted for 1/2 cup of apple sauce and 1/2 cup oil. Thanks for the advice! This recipe is a keeper! Cheers!

Carrot and Ginger Soup

When making this recipe I noticed the 4 cups of water on the list and thought "darnit, I don't have any chicken broth!" I had also read that other viewers had the same inclination to use chicken broth rather than water. So I went ahead and used the water because I didn't want to make a special trip to the store just for that ingredient. I am SO glad I didn't because it didn't need it! The soup was wonderful and flavorful. Some reviews said it was bland but I beg to differ! Also some said the ginger flavor was too over powering. I, again, disagree! I followed the recipe exactly and I am so glad I did! No changes necessary on this one! Thanks for the recipe. I will make it again for sure!

Sweet Corn Cake

Oh my goodness, this recipe is such a treat and such a fantastic side next to some fantastic mexican food! I made some shredded beef tacos will all the toppings and served the sweet corn cake on the side and it was a huge hit! I was even thinking this might be nice to make instead of corn bread for Thanksgiving this year! Truely delicious! Thank you for the recipe!

Avocado Pie

I made some changes to the original recipe like some of the others. I used fresh lime juice rather than lemon and I also added a half of a package of cream cheese for nicer texture. I also did something a little different, I added a few sprigs of fresh mint to the avacados while they were pureeing in the food processor. The mint brought a nice fresh taste to the pie. I ended up calling it mojito pie because it reminded me so much of the refreshing beverage. Like another viewer, I felt that the pie was too sour. I would definately cut back on the amount of lime juice the next time I make it. I love this recipe and will make it again for sure!

Boilermaker Tailgate Chili

Barbecue Ribs

This was my first attempt at making ribs. I made them for my dad, husband, and brother in-law for father's day. Everyone loved these ribs and commented on how wonderful the sauce was. Not too overpowering like store bought barbecue sauce. And they were so tender the meat was falling off the bone! Ah, success! I will definately make this again.

Best Chocolate Chip Cookies

They aren't kidding when they say these are "the best" chocolate chip cookies! These are not fancy, complicated, or overdone. Speaking of "done" I baked mine for 2 extra minutes and they were perfect! Anyway, the simplicity of these cookies is what makes them so great! Perfectly good, deliciously wonderful chocolate chip cookies (in my opinion) they way the should be! I will definately make these again! Cheers!

Indonesian Satay

Yow-zah, what a recipe! The marinade for the chicken was delightful! And I love it that you don't have to marinate it for hours on end. I am not always so good at planning dinner a day in advance so this recipe was perfect for me. And even with the short marinating time, there is NO scrimping on the taste! Oh and did I mention how heavenly the peanut sauce is? My husband said that he has had lots of good chicken skewers at restaurants but none of them even compare to these! This is definately a keeper. Absolutely delicious! Thank you!!
