Czech Stuffed Green Peppers

This was quick and easy. Everyone loved it. I added garlic to the mix and did not blend it at the end. My family wants it again.

Mashed Potato Soup

This is a great simple recipe!! I had leftover mashed taters and looked on here for ideas. I cut my onions in thick pieces to give texture and I did not thoroughly sauté them so there was an extras little crunch and texture in the soup. You can add ½ and ½ instead of milk and it is wonderfully creamy. Top with pepper jack cheese and bacon makes it wonderful with a zing!

Roasted Easter Ham

I saw this recipe and thought GREAT no cloves! I mixed it all together and thought it tasted great, but then I wanted to add my own flair. I did as many others here did I used Spicy Mustard in place of the yellow mustard. I also added 2 tsp garlic powder, and about ¼ cup of horseradish. It was a hit, everyone loved it. I used a 10 pound ham spread it all around baked it tented with tin foil. The last 30 minutes I took off the tinfoil and it got a nice crust. The only down side was the color of the mixture was pea soup green. Today I am using the left over ham to make potato soup.

Quick and Almost-Professional Buttercream Icing

This was by far the best frosting I have ever had!! Let me start by saying I am not a cake or frosting maker this was my first go at this type of frosting. I ended up tripling the recipe because other reviews said one batch barely covered a batch of cupcakes. That is so not true! I generously frosted two nine inch cakes (stacked) and one 9x13 pan and still had leftovers. I think what may have yielded a much fluffier frosting was leaving the stand mixer run for longer (I had a distraction). I brought them over to my in-laws for a party and EVERYONE was in love with this frosting. It is sweet and rich but it really made a cake from a box (Pillsbury) taste like it was from scratch.

Eggplant Sandwiches

This is becoming a house favorite even for our two year old and four year old. It is quick and easy. Just remember to cut a few hours before and put salt and remove excess moisture before broiling. This last time I was short on ingredients. So instead I used equal parts of mayo, sour cream and plain yogurt. I than mixed it with garlic powder, dry basil, and dried mint. It was delish! It is a great way to cut some meat in our diet and we get so full!

Baked Soy Lemon Chops

These were so good, quick and easy. I agree with others reviews they are a little salty but still very yummy! My honey did not think they were too salty. He LOVED them, I will be making these again and again. They were so tender and could be cut with a fork. The only thing different we did was use eight large cloves of garlic instead of four. In our opinion you can never have enough garlic. I served it with jasmine rice.

I liked that it was very quick and easy. The only thing is we thought it was a little bland, maybe it is the brand of rice were using. We ended up using the sauce from our baked soy lemon chops to kick it up a little. I will be making this again with a different brand of rice.
