Mom's Fabulous Chicken Pot Pie with Biscuit Crust

Delicious! I added one potato, and sautéed with the veggies. I replaced the cream with fat free/lactose free milk. I replaced the butter with coconut oil, omitted the parsley and used a good amount of thyme. I also used a 9x13 and ripped the biscuits in half, they cooked all the way through in 25 minutes. Veggies could be doubled and chicken omitted for vegetarians. Hubby had four or five servings, and four year old had two (even though he usually doesn't touch food with herbs)

Tofu Pumpkin Pie

love this stuff! I used graham cracker crust last time I made it and while that sounds different it still turned out great. I only used cinnamon as that was all I had and it still came out wonderful. If you are finding this bland, you are not adding enough spice and sugar with the all important dash of salt. Also, VERY important to use SOFT not firm tofu, or it will have a weird texture, along with a very good food processor.

Chicken Tortilla Casserole

very good. I halved the recipe and used one can of cheese (campbells) instead of cream of mushroom/chicken. I used sour cream mixed with broth instead of milk, mixed the salsa in with the cooked chicken, and added green chiles to the cheese sauce. Topped with olives per the pic. Would make again, maybe with a dash of cumin and paprika in with the chicken. My son ate it up and asked for seconds! Husband had thirds.

Asian Coleslaw

Great slaw! To make things simpler, I used one head of regular cabbage and a couple cups of shredded carrots. I also used almond butter instead of peanut to make it slightly healthier.

Applesauce Bars

I make this with Cinnamon instead of pumpkin pie spice and it still turns out great! I sometimes add raisins soaked in water, then drained. I have used gluten free flour or wheat flour and it still turns out. I cut down on the sugar, and add a shredded apple or two. I also replace the butter with EV coconut oil or extra applesauce. As for the frosting, any will do and none at all is still good.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This is good. This is really good. I used plain yogurt instead of sour cream and extra virgin coconut oil instead of butter. I didn't have vegetable broth so I used chicken and I shredded the apple. Very healthy, and caretenoids have been found to help skin glow golden! My waistline didn't like it as much as my skin, though...when soup is this good I have no self control!

Adobo Chicken with Ginger

This is delicious! It came out tender with just the right spice- plus perfect ingredients for if you are sick like ginger and garlic (great for the immune system). I used crushed black pepper since I didn't have peppercorns. Great over white long grain rice!

Grill Dough

WOW. I usually don't have time to review recipes, but considering I want to kiss the person who posted this' feet I figure it is the least I can do. This. is. AMAZING! I have had all types of pizza from all over and NOTHING compares to this when it is made right. I replaced the olive oil with melted butter, and increased the sugar to 2 tablespoons as another reviewer suggested. When it rose, I heated both sides on the grill until done and brought it in for the toppings. I added fresh chopped roma tomatoes, roasted garlic, purple onion, fresh sliced button mushrooms, feta and seven types of cheeses. It came out very 'gourmet' to say the least. I also broke it up into four personal pizzas. If my husband was not in love with me before, he is now! I was going to take a picture, but the pizza did not last long enough. Thank you for this!

Mouth-Watering Stuffed Mushrooms

These make a fantastic base recipe for stuffed mushrooms. You can add a little chopped meat- some crab or shrimp or even spicy sausage. I would say it does need something extra, though. My 'extra' was chopped green onions- perfect! I seperated the parmesan and put it on top of the filled mushrooms instead of mixing it in and it browned beautifully but needed a couple minutes longer. 5*

Southwestern Egg Rolls

MMMmmmmmmmmm. This is really, really good. I used the cilantro cream dip recipe from this site, and they are so good together! I also baked it on 475 for 20 minutes and sprayed with oil first. If you are hesitating to make these...don't!

Catherine's Spicy Chicken Soup

This was good. If you want to make it better, healthier and quicker, here's what you do: 1.Make it a one-pot-dish and buy an already made chicken, preferably a rotisserie. Sautee the ingredients that need to be sauteed first, add other ingredients, and add the chicken and spices last. 2. Omit the whole tomatoes. They just don't make sense. 3. If you like it spicy, which this dish is NOT really originally add chayenne pepper to taste. 1 tsp should be perfect. 4. Add cumin seed ground- 1 tablespoon for some extra flavor. 5. Substitute the sour cream for some fat free sour cream, or to make it really healthy plain fat free yogurt- but you risk changing the taste with yogurt. Go for the fat free sour cream if you don't want to chance it-and add it LAST. Reserve some for the top along with shredded cheese. 6.Don't let it taste like enchilada filling-thats just not a good taste for a soup to have. CHUNK the chicken, don't shred it. 8. Add black beans instead of chili beans-they are so much healthier- and rinse thouroughly. Everyone knows the starches on the beans just don't taste good. To make it more of a 'chili' add kidney, black AND white beans. 3 cans won't be too much especially if you spiced it up with chayenne pepper. 9. To spice it up even more get the diced tomatoes WITH jalapenos or green peppers. Jalapenos are good for the metabolism but bad for the weak-stomached or heartburn prone. 10. Go with the crusty bread- or even better, put it in a sourdough bread boule. 11. ENJ

Fresh Ginger Cookies

These were great. I baked 1 minute under baking time to make sure it didn't come out crunchy- I like chewy cookies. I added fresh ginger but I added extra, and it was too gingery.

Best Chocolate Chip Cookies

I've tried probably ALL the cookie recipes on here. These truly are the best. For the people complaining, be sure to flatten the balls, because they don't really spread. Also DO not cook them longer than 10-11 minutes. They may seem gooey but just let them chill for a while. I use chocolate chunks AND chocolate chips for extra measure.
