Oven Brown Rice

Reviewed: Nov. 21, 2011
A family favorite with just a few revisions: 2 3/4 c. of broth, either chicken or beef (don't need two kinds), 1 T. olive oil (instead of butter), 1/2 t. garlic salt, 1 t. Original Blend Mrs. Dash seasoning. I bake covered for 50 minutes and then bake it uncovered for 10 more minutes.

Bland flavor and appearance. Definitely not worth making again.

Mound Bars

Great, easy recipe. My husband said these might be his new favorite cookie and he isn't even a coconut fan.

Absolutely the best pecan pie I've ever had and my family said the same.

Cinnamon Raisin Bread I

Reviewed: Nov. 16, 2011
Too sweet for our tastes. The dough was too puffy and it was hard to toast because the rings of dough separated.

Chocolate Oatmeal Cookies

Tasted a bit too strongly of baking soda and the chocolate flavor was weak. Recipe needs tweaking.

Kid-Friendly Wheat Bread

Reviewed: Oct. 5, 2011
Followed the recipe quantities exactly, which resulted in an excellent bread. Just be sure to knead it long enough when using a Kitchen Aid mixer. This is now a standard in our kitchen.

Dark Chocolate Cake I

Reviewed: Apr. 17, 2008
I recommend substituting 1/2 cup espresso and 1 1/2 cups boiling water to enrich the chocolate flavor. Be careful not to bake this cake too long -- it can dry out quickly.

Creamy Chocolate Frosting

Reviewed: Apr. 17, 2008
Great texture and flavor. I recommend making and using it the day you intend to serve your baked goodie because it was kind of crusty the next day. To frost and fill a double-layer cake and frost 9 cupcakes, I combined 4 1/8 c. sugar, 12 T. cocoa, 9 T. butter, 7.5 T. milk and 1.5 t. vanilla.
