Black-Eyed Pea Gumbo

I tried this and it took Black-Eyed Peas to a whole new dimension! Great for giving those Peas a "makeover" and bring back the romance with this vegetable.

Eggplant Parmesan I

It was a great experience creating this dish for the first time. The only thing I did different was to dip in egg and coat with Italian bread crumbs then layered in dish. Great!

Cheesy Tuna Noodle Casserole

Tamale Pie

Slow Cooker Creamed Corn

This was the best creamed corn I have ever had. I liked the idea that it "slow" cooks. I doubled the portions to feed a large group and at the end there was one kernel left in the pot!

This was very easy. I opted to use frozen meatballs which made it even more of a time saver. My husband loved it because for years we would buy the frozen Stouffers product. This was my first time making it and it came out perrrrrrfect. Thanks
