Easy Bacon and Cheese Quiche

Reviewed: Dec. 2, 2013
This quiche recipe was great! I usually throw in some broccoli in my quiches but I have to say I did not miss it here. I did make a couple of modifications though and I think they really pushed this recipe into the 5 star category. Firstly, instead of using bacon bits I cooked thick cut bacon in the oven at 400 degrees seasoned with fresh ground pepper and dried rosemary until crisp (about 25 minutes). I also used skim milk instead of cream because its what I had on hand. Finally, I didn't have any grated parmesan so instead I used a shaved parmesan/reggiano blend that I had on hand. Oh, and I beat the heck out of the egg/milk mixture! Makes it nice and fluffy. The results were magnificent!

Chocolate Chip Cookies Lite

Reviewed: Jan. 20, 2009
These cookies are delicious...for being low fat. If you hadn't told me they were low fat and I popped one in my mouth, I would have thought them so - so. I substituted splenda for sugar (use half since splenda is 2x as sweet) and cut down the calories even further. A note here: the recipe says to use an ungreased cookie sheet, but these cookies WILL stick! I recommend doing a quick spray of non stick just to be safe. Also, these make 12 very small bite size cookies. It was hard for me to stop at two! What I love is that these cookies fit perfectly into my diet. But I kinda stick by the old adage..."If you're gonna have a cookie HAVE A COOKIE!" In other words, to really satisfy my sweet tooth I'll reach for Mrs. Fields. :)

Lemon Rosemary Salmon

Reviewed: Jan. 7, 2009
This is by far the simplest recipe to follow with the most phenomenal results that I have found on this or any other recipe website. I did follow other users suggestions and wrapped the salmon in tinfoil before baking. I also coated both sides of the filets with salt and pepper and used dried rosemary and packaged lemon juice (as that is what I had handy). I also piled on canned minced garlic. This came out so delicious and the smell is intoxicating!! I will definately use this recipe over and over again!

Italian Spaghetti Sauce with Meatballs

Reviewed: Jan. 4, 2009
This recipe is fantastic and so easy to make! I made this for the first time last week and both me and my boyfriend loved it! It tastes like the sauce my Italian neighbors used to make when I was a kid. I made this again last night for a dinner party (doubled the recipe) and accidentally cooked it an extra 10 minutes. It came out even better which I didn't think possible! I am making this again so I can freeze the sauce for a rainy day.

Quick Pot Sticker Soup

Reviewed: Oct. 27, 2008
My girlfriends and I hold a monthly cooking club in which we rotate the hosting. This was my month and I decided to go with an asian-themed dinner. I used this soup as my entree -- what a hit! It was so quick and easy I was able to entertain my guests and prepare this sound without messing it up at all! I substituted the regular chicken broth for low soduim chick broth since the recipe calls for sesame oil and salt. I also used pork and veggie steamed dumplings instead of just veggie dumplings for a little variety. My boyfriend can be a picky eater and he absolutely loved this! Definately a keeper.

Easy Broccoli Quiche

Reviewed: Apr. 15, 2008
This recipe is fantastic!! I am new to cooking, and having just moved in with my boyfriend so I'll have to do better than cereal for dinner. I actually forgot to buy a pie shell, so I almost gave up until on the whole thing until I found a super quick and easy pie crust recipe on!! I also used 1% milk to make it a bit lighter, but it still came out really delicious!! One thing I am thinking of adding next time is diced cooked bacon to the egg mixture. This has given me a lot of confidence in the kitchen!!
