Jay's Jerk Chicken

This was the best jerk chicken I've ever made. I added 3 garlic cloves, 1/2 cup of pineapple orange juice and used 1/2 of a ghost pepper since that's all I had. It was so tender and juicy. Thanks!

Caramelized Spicy Pumpkin Seeds

Yum! I "hate" plain old pumpkin seeds but these are awesome. I didn't quite follow the directions...I melted the butter and brown sugar, added the spices and then the seeds and roasted them for about 20 mins. Then I spread them on aluminum foil (didn't have any parchment paper) and sprinkled them with white sugar. They are crunchy, caramelly goodness. Thanks!

German Apple Cake I

Delicious cake! I made this for my German meal of pork chops with apples and onions, potato salad, and red cabbage. The cake is supermoist. I used 1 cup of Stevia and 1/2 cup of sugar (could have used less) and 1/2 cup applesauce and 1/2 cup oil. I also added more cinnamon and vanilla just because. We will see how much is left tomorrow!

Hot German Potato Salad III

Delicious! I have made this several times and even told one of my friends to make it for his family. Everyone loves this. To make it more authentic, use beef broth instead of water. Yum!

Ginger Glazed Mahi Mahi

I made this last week and just now got around to reviewing it. I tried this first with mahi mahi, and it was good but our mahi was not. So the next night I tried it on salmon and that was a hit. I might even try this on chicken breast....Very good recipe.

French Leek Pie

I made this last month for a brunch and today I'm making it because I haven't been able to keep my mind off of it! Last time I used frozen leeks and all Gruyere cheese but today I used 4 fresh leeks and a Swiss/Gruyere shredded blend from Trader Joes. I also added garlic and fresh nutmeg both times (a definite must when you have any creamy quiche) and I blind baked the crust for about 15 minutes, another MUST when you make ANY quiche...who likes soggy crust? This is a very rich and delicious quiche and I love the fact that there are no eggs in it. Serving it for lunch with a salad and Bloody Mary today...can't wait!

Baby Back Ribs

If you want awesome ribs, you have to try this. I also used a rub overnight like other viewers did, then put just a little BBQ sauce on them. After I pulled them out of the oven, I slapped them on the grill for 10 mins or so and slathered them in a rib glaze that I got from a local BBQ restaurant. The meat fell off the bones and the flavor was tremendous. Making them again today for 4th of July!

Three Berry Pie

I used the Butter Flaky Pie Crust recipe from this site to make this into a tart instead of a pie. I blind baked the crust for 15 mins, added the extra sugar/cornstarch on the bottom and it turned out great. I let it sit overnight so the consistency was perfect. Not too sweet and got rave reviews from my family.

Butter Flaky Pie Crust

Flaky, yummy, buttery crust. I used this for the Three Berry Pie recipe but I made it into a tart instead. I only had salted butter so I omitted the salt. Used the kitchen aid mixer and it turned out perfect.

Fresh-Squeezed Salty Dog

After buying tons of grapefruit from a co-worker's son for a high school fundraiser, I tried this recipe and my oh my, am I glad I did! I used vodka instead of gin just because that's what I had on hand, and added a packet of Splenda for a little sweetness. Very refreshing!

Easy Roasted Pork

I made this on Christmas Eve for family and got rave reviews from everyone. I used a 5 lb pork roast so I doubled the ingredients. I rubbed it with a little salt and pepper a few hours before roasting. Based on other reviews, I also added a few tablespoons of soy sauce. Cooked it in a bag for about 1 hr 45 minutes and let the meat rest in the bag for 20 minutes. I reduced the sauce to a glaze and drizzled it over the meat. The meat was so tender you could cut it with a fork. Served it with red potatoes roasted in the oven with olive oil and sea salt, and green beans sauteed with almonds. Yum! Shredded the leftover pork and mixed it with some bbq sauce for another yummy meal. Thanks for posting this recipe, will definitely make again!

Quinoa and Black Beans

My first time making quinoa, and I was quite impressed. I didn't read all of the review first, and if I had I might have cut it down to just 1 can of beans or would have increased the quinoa, liquid and spices a little. It just looks a little disproportionate with all those beans. I did not have any cilantro and I really missed that. It also would be good with some halved grape tomatoes like other reviewers did. Will try that next time!

Taco Seasoning I

I only had Ancho Chili Powder, garlic salt and oregano flakes on hand but this still turned out really good. I rubbed this on chicken tenders, squeezed with a little lime, sauteed in nonstick cooking spray. Was a little dry (from the nonstick spray I'm sure) so I added a few tablespoons of salsa and that made it even better! Using the chicken as a topping for a chicken taco salad -- YUM!

Mediterranean Stuffed Chicken

Before making this for guests, I did a trial run with the hubby and a close friend. Based on other reviews, I added some spices and chopped up marinated hot peppers to the filling. I had some pretty thick chicken breast so I cut them in half, pounded them thin, added the filling and folded the chicken in half. Then I dipped the chicken in melted butter and rolled in whole wheat panko. It was fabulous but next time I will add sun dried tomatoes and maybe a little kalamata olives to the filling. Served with Greek Orzo Pasta from this site and some sauteed green beans. ** Update ** I made this again and added kalamata olives, tomatoes and feta to the filling and it was amazing!

Greek Orzo Salad

Delicious! I did not have artichoke hearts (and I really wish I did, this would have been even better!) and I used kalamata olives instead of black olives since that's what I had on hand. Will be making again this week AFTER I go to the store for artichoke hearts!

When I returned from a recent trip to Japan, I was craving these and was so glad I found this recipe. I did add some additional spices and used bottled gyoza dipping sauce. Very good!
