Chewy Peanut Butter Brownies

Okay so...I read pretty much EVERY review so that I could get these right. No one's tried them yet because they're currently cooling, but they do look delicious. I was originally planning on making 2 8 x 8 pans, so I doubled all of the ingredients, adding just 3 eggs - but there was definitely not enough mixture for two pans, so I used one and made a very dense brownie. Since it's supposed to taste like cake I figure that'll be fine. I also made Tianne's frosting recipe (from this web site) and will add it once they've cooled. I also added just under a package of semi-sweet chocolate chipits, a bit over 1 cup of peanut butter, about 1/4 cup cocoa powder and only 1 3/4 cup flour.

Crunchy Peanut Butter Balls

I must be an idiot or something, but I did not find this recipe easy to make AT ALL! Well, everything went well up until the chocolate came into play. I used 2 cups rice krispies like suggested, and I put the mixture in the freezer for 20 min before making the balls, then I made balls, stuck toothpicks in them, and froze them for another 20ish min, THEN I tried melting the choc with a couple teaspoons of butter instead of shortening, and boy oh boy was that ever a mistake - the chocolate burnt and was all clumpy and weird! So I melted more chocolate without butter, then it was such a challenge to cover the balls, such a mess, the toothpicks would break off and the balls would get deformed. They look cute now that all is said and done, but it was messy and stressed me out!! lol Thanks for the recipe though, mm :)

Cranberry Nut Bread II

FANTASTIC! A couple changes: 1/4 cup applesauce instead of butter, 1 cup pecans, 1 cup craisins (poured boiling water over the craisins for 15 min prior to using). I put a foil tent over and removed it during the last 7 minutes of cooking. It looked & tasted amazing! Thanks chef! Update: I wanted to make this again but I only had about a half a cup of craisins, so I made half the recipe (with the aforementioned changes) and instead of orange juice (didn't have any), I used diet cranberry pop and made 12 pink muffins that look so cute!

Cream Corn Like No Other

It was really runny so I had to add extra flour. My family said it was too rich. It was okay, but too rich to eat too much of it. I didn't have a full cup of sour cream so I added a little miracle whip and used mozzarella cheese instead of parm.

Stuffed Peppers

This was my first time making stuffed peppers and my family loved them! My sister wished I added cheese to the stuffing though. I guess it all depends on your personal preference. I also made 3/4 of a cup of rice instead of 1/2 a cup, and it still only filled 4 peppers. I was using large green peppers though and wanted them to be really full.

Egg-Free Bonbon Cookies

With a few changes, this was great! They look so pretty too. I chopped up cherries and added them to the batter. My family likes nuts so I added walnuts as well. Before putting them in the oven, I mixed sugar and walnuts together and dipped the up side of the balls to the mixture. They look very festive! :)

Caramel Pecan Cookies

It was easy to make and they turned out wonderfully. They look great and taste great. I followed the recipe exactly and it made 40 cookies! I was surprised. I used the smaller sized rolos though that you can buy in a bag so maybe I was using less dough? They look just as big as in the picture though. Freezing the rolos for an hour or so beforehand is a good idea - I did this and no caramel leaked out.
