Shrimp and Crab Bisque

Added Old Bay, paprika, 1 tbsp. tomato paste, garlic powder, sauteed celery a can of mushroom soup. Substituted dry sherry for the white wine. Excellent!

Irish Chicken and Dumplings

Used bone-in breasts and baby carrots as a substitute. Recipe doesn't state to peel the potatoes, I think I would prefer this. My son doesn't like peas, so left them out. Also, to save time I used store bought refrigerated biscuits with similar/same result.

Coconut Ambrosia Salad

I've been making this for years. Also tastes great with a container of pina colada or pineapple yogurt in place of the milk. Adds a bit of tangy smoothie flavor.

Irish Cream Bundt Cake

Pasta Fagioli Soup

Get ready for lots of soup--this recipe makes tons. I omitted the bacon and subbed frozen for canned spinach and added okra. The kids didn't like the spinach in the soup, even though they like it sauteed.

Moussaka

This was great. Use lamb instead of beef for more authentic flavor. I doubled the spices, including the garlic, and baked, instead of fried, the eggplant, as other reviewers suggested. Makes a lot of bechamel sauce, OK with me.

Chunky Cheesecake Brownies

I don't know where to begin, I had so many problems with this recipe. First, I didn't have an 8x8 pan, so I made them in a 9x9 pan. I didn't have enough chocolate batter to put the top layer over the cheesecake. I didn't think this would matter and turned out it didn't. Then the chocolate chips never melted in the batter, so you are biting into chip-sized chunks of chocolate in almost every bite. In addition, the brownie batter is so dry, tasteless, and crumbly, that even my kids didn't eat them and you know that is a big problem if they won't eat something chocolate. I recommend refrigerating them for the cheesecake, but I had to throw most of them away.

Enchiladas Suizas

This recipe was a good starting point. I added green peppers because I didn't have any chopped chile peppers. I also had leftover shrimp and scallops, so I made two batches, one with chicken and one with the seafood. I put them in two casseroles. I found they were a bit dry, and I like my enchiladas juicy, so I mixed one can of Campbell's mexican cooking soup with a cup of half and half and poured it over top, then sprinkled with cheese. They turned out great!!!

Overall very good. I added the garlic to the melted butter and brushed on the bread. Everyone loved them, including the kids who asked for them again soon. They reminded me of Navajo frybread that I served with jelly. I would recommend making the golf ball sized dough balls a bit larger and then cutting the cooked bread with a pizza wheel into triangles, (Like they do at the Indian restaurant). Mine didn't get as puffy as the photo.

Very good pie, similar to key lime but with a salty pretzel crust and fluffier filling due to the cool whip. I like the idea of freezing it like another reviewer suggested--Good Idea I will have to try this! Kids loved it without the tequila.

Baby Blue Punch

Good flavor with the kids. I floated a rubber duck in the punch, as shown in the other photo for this recipe. The other photo also has a more realistic color, my punch was much darker the ice cream floated the whole time. I omitted the sugar entirely due to other's comments. I don't think it was needed with the soda and cranberry juice already sweetened. A single recipe was perfect. Thanks for the great idea, the rubber duckie was also a conversation piece.

Chicken and Broccoli Braid

My family loved this recipe. I followed it exactly, except for the dill and the dough directons. I reduced the amount to 1/2 tsp. I like dill, but not love it! And for the braid, I cut the strips AFTER I placed the chicen on the dough, not before, as directed in the recipe. See my photo with the recipe too!

Chocolate Brittle Surprise

Had these for tea at a nearby bed and breakfast. Don't make the mistake I made, added one pound instead of one cup of butter. You only need two sticks. A little bit goes a long way.
