Basic Flaky Pie Crust

Reviewed: Apr. 16, 2008
after trying a few different variations, i actually got a great result using 1/4 cup chilled butter and 1/4 cup room temperature lard for the fat in this pie crust and it turned out great.

Gooey Butter Cookies

Reviewed: Apr. 19, 2008
these cookies are very tasty, but as many other reviewers stated, a variation on the cake mix flavor or addition of chocolate chips or icing would make them even better!

Luscious Spinach Artichoke Dip

Reviewed: Apr. 19, 2008
i made a few changes on this recipe and it was a big hit. my boyfriend doesn't like artichokes, so i left them out completely. i added a bit more garlic and parmesan, just b/c of our tastes, and i put them in mini phyllo shells before i baked them. they were gone as quickly as i put them out there! really tasty, and presents very well in the phyllo shells!!

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

Reviewed: Apr. 19, 2008
this is a good recipe on some levels, but for our tastes, i made a few changes. I left the bacon off. i thought it was too overpowering combined with the flavors of the filling. i added more ricotta and some feta to the filling. tried just stuffing the breasts traditionally and coating in flour and it turned out a lot better. nice recipe as is for bacon lovers, but it was a little rich for us that way!

Chicken Enchiladas V

Reviewed: Apr. 22, 2008
after reading other reviews for helpful tips and adding a few of my own this recipe was delicious!! from other's advice i added green chiles to the sour cream/soup mixture and put that mixture in with the chicken while wrapping in the tortillas. i also added red enchilada sauce and salsa to the sour cream/soup mixture. i cooked the chicken with taco seasoning instead of chili powder also. adding some cheese to the chicken while wrapping in the tortillas gave them a little extra added flavor. i also made the double the amount of the soup/sour cream mix and smothered the top completely with sauce and then shredded cheese before baking!

My Mom's Parmesan Chicken

Reviewed: May 1, 2008
The flavor in this dish was excellent, no complaints there!!! The chicken's breading was pretty soggy though when i was taking it out. I stuck it under the broiler for a few minutes and that helped! The mix of seasonings was perfect though! Just added more garlic, as I always do! Very simple and very tasty recipe! It's a keeper!!!

Gravy Baked Pork Chops

Reviewed: May 3, 2008
I have always breaded and fried my pork chops, but decided to stray from the norm with this recipe and i'm glad i did! It was a really great variation on chops. The only change I made was I sauteed a small onion and some minced garlic in olive oil and used that instead of the water that the recipe calls for! I just mixed the soup/milk mixture in my large skillet with the onion and garlic and added a little touch of flour to make the gravy and it was spectacular! Really moist chops and a delicious, creamy gravy. Served with whole grain rice and it was a perfect complete meal!! Thanks for the recipe!!

I thought these were pretty good. not the best mexican wedding cake recipe i ever used but they were pretty rich and tasty. the butter/flour ratio seemed a little off though.

Spicy Garlic Lime Chicken

Reviewed: May 20, 2008
Just a fun little tip I thought I would share with everyone! I make this without the lime every time now because of our taste preference, and last time I made it, I took the left over chicken breast and chopped it up with a little onion and mayo and it made some amazing spicy chicken salad! Just thought I would share a little tip for using leftovers!

Ranch Oyster Crackers

Reviewed: May 22, 2008
these are a really tasty snack! if you like a little spice, i have sprinkled these with crushed red pepper flakes after coming out of the oven! i have never measured how much, i just eyeball it but it gives it a spicy flavor that really adds to the ranch!

Ranch Dipped Chicken Fingers

Reviewed: May 23, 2008
ok, this is basically my explanation of how i changed up this recipe, but i thought it was tasty. instead of the ranch dressing, i dipped chicken strips into dry ranch dressing mix, then into milk/egg, and then into panko bread crumbs, with salt, pepper, garlic powder, and paprika added to panko. fried them on medium heat in pan with vegetable oil and butter. yummy! we used the dipping sauce with it too, with honey instead of brown sugar and it was delicious!

Chocolate Trifle

Reviewed: May 27, 2008
WOW!!! I made this recipe with using some recommendations from other reviewers. Used heavy whipping cream instead of cool whip in pudding mixture and added toffee pieces on top of brownie layer. topped with pieces of crumbled brownie. presented so well and was so rich and tasty! everyone loved it at memorial day party i brought it too!!! (UPDATE: for easier cutting of the brownies, i inverted brownies out of pan onto cookie sheet after about five minutes out of oven and cut into one inch squares with a pizza cutter! so much easier)

Tiropetes

Reviewed: Jun. 1, 2008
this was fantastic! i used mozzarella instead of monterey jack, b/c i couldn't find it, and added about 1/4 cup parmesan b/c i was a few ounces short on the feta! i put the mixture in mini phyllo cups and they were gone within minutes! delicious appetizer! great flavor! i did add a little garlic powder when i put the salt and pepper in too!
