About this Cook
I am a happily married mother of 2 grown children and grandmother to 2 beautiful girls aged 15 and 8. My daughter and son-in-law just moved from Irving, TX, to "uptown" Dallas in a really great area within walking distance of many great places to eat. I am semi-retired from a very high stress job, and I now work 3 days a week in a used book store. I love reading, so this is a great job for me and stress-free! Since I have much more time (thanks to my wonderful husband!), I am really enjoying my kitchen and learning new dishes.
My favorite things to cook
Dinners that are really delicious but also healthy, low-fat, and nutritious for myself and my husband. I want to keep him healthy and happy because he is such a wonderful husband, father, and all around great guy. And I've had 26 1/2 years of marriage to him to learn to appreciate him.
My favorite family cooking traditions
Our family used to get together for a meal for all of the important holidays, and my sister and I still do this. Since I came to enjoy cooking only in the past few years, she is the one who learned to make our mother's chicken and dressing, chicken and dumplings, lemon ice box pie, biscuits, etc. while Mama was still with us. I don't try to compete with that, but am developing my own traditions.
My cooking triumphs
My husband thinks everything I make is great and both of my children have their favorites. My current favorite is a modification of the California Style Israeli Salad from this site since fresh tomatoes are great now and a slaw recipe that I modified from a South Beach Diet recipe.
My cooking tragedies
Since I cook more by smell than tasting, I really blew a recipe for gazpacho for a group dinner when I had a cold. It just didn't smell right and I kept adding things to "fix" it. When it was finally done and chilled, it didn't taste good at all! Too much of several things. Don't tamper with the recipe when you've got a cold. :) Thankfully, my contribution was to be soup or salad, and I knew that some people wouldn't care for gazpacho, so I also had a salad prepared.

Bell Pepper and Lemon Salmon
Thank you for a great recipe. I fixed this tonight. Left out the peppers because I don't much care for cooked bell peppers and used tilapia instead of salmon. Other than the above changes and adding salt and pepper, I followed the recipe. My husband said that it was "out of the park awesome". Again. Thanks for a great and really easy recipe.

Low Carb Jambalaya
This is a great dish even if those nit pickers (including my sister) say it isn't jambalaya because it has no rice. Who cares? It is really good. I realized at the last minute that I didn't have any zucchini so I threw in a can of okra and I added an extra can of tomatoes. Left out the hot sauce (DH doesn't like hot stuff) and let everyone add it to their own bowl. I also took the suggestion of another reader and served it with spaghetti squash. All 5 of the people eating it loved it, and there was only a little bit left. My sister begged the rest of it from me the next day for her lunch. This recipe will definitely become a regular here, and I think I will try making it in the slow cooker. Thanks, Morgan, for a great dish.

Connoisseur's Casserole
For Thanksgiving, I wanted to make something a bit different instead of plain old green bean casserole, so I decided to try this recipe. I used yellow whole kernel corn since I didnt' have any white corn on hand,and used cream of mushroom soup since I didn't have any cream of celery. Added a jar of canned mushooms and used French's fried onions on top instead of the crackers because my daughter loves them. Omitted the slivered almonds. Everybody loved this casserole.
