Gloria's Rum Cake

This is ALMOST like my Aunt Hazel's rum cake. You have to double the glaze part and pour slowly over the hot cake (I don't poke holes in cuz I like the nuts to get soaked with it). Also, be sure to use dark rum for the best flavor.

Grilled-Salmon Lemon Basil Cream

I live in Alaska and I made this for FRESH ocean king steaks tonight for dinner. OMG!!! No restaurant could touch this meal for less than $30 a plate. Five stars just isn't enough for this one. To die for!!! I only had one lemon so I didn't have quite 1/4 cup of juice but was still very lemony. I also used fresh lemon basil from my greenhouse and a few more cloves of garlic. My husband thought he died and went to heaven.

Best Buttercream Frosting

For those of you who tried this and it didn't work, TRY AGAIN! This frosting is absolutely devine. Patience is the key here so take your time and your efforts will be rewarded 10-fold. My husband said he could have eaten all of it with a spoon. Don't try to form a ball when cooking. Instead, keep stirring it about 15 or 20 minutes (a Mini Whipper fro Pampered Chef is the best!)until it gets really thick and then take it off the heat. Cool until it's about 80 to 85 degrees and continue with the recipe. If you let it get too cold, you'll have lumps in the finished product.

Oatmeal Peanut Butter Cookies III

These were really good, but the dough was the best of all. My kids actually liked the cookies better without them being sandwiches. Next time I'll skip the filling and just make the cookie part, and double the recipe.

Baked Salmon Fillets Dijon

This was ok, but I've made something like this before. However, add some honey to country style dijon mustard, bread crumbs, and pecans. Much better that way.

Asian Salmon

This is for all you salmon haters! If you don't like salmon, then you haven't had FRESH salmon. Also, don't eat the pink stuff. Get the red or king when available. This recipe is awesome when using the good stuff.

Amazing Ribs

These were good but not GREAT. First of all I think I used the wrong ingredients. I used an amber beer and cheap BBQ sauce. Also, I live where it gets really cold in the winter so outside grilling was NOT an option. Instead I used my indoor Geaorge Foreman grill and it worked just fine. Everyone liked them, but next time I'll use good stuff.

Prime Rib of Beef in Salt Crust

I made this for Christmas dinner and used a 12-lb. boneless prime rib. It was simple and just had fantastic flavor. I took it out of the oven when the middle read 135 degrees (almost 3 hours) and let it sit for 30 minutes and it was a perfect medium rare. Very easy and will definitely be using this again.

Cowboy Mashed Potatoes

These were ok. My kids didn't like the corn in it and I didn't use any peppers. They needed salt even after cooking the spuds in heavily salted water. I won't be making this again.

Candy Cane Cookies III

These are very mild but tasty. They look great with an assortment on a tray...adds color and variety. I made green and white, red and white, and red and green. My kids really liked them. The hardest part was crushing the candy canes. I also used a full tsp. of peppermint extract...1/2 tsp. would not be enough.

Japanese Chicken Wings

Can't see what all the hype is about over these. They were messy to make and the flavor was just so-so. They also took longer to bake than what was said in the recipe. I think I'll just keep making them plain in the oven with butter and seasonings.

Almond Rhubarb Coffee Cake

This was really good. I made a batch and a half and used one 9-in pan and one 11-inch deep dish pan. The bigger one took about an hour in the oven and came out perfect. The almonds were the best part...they tasted like pralines with all the butter and sugar baked on them. I added cinnamon to the batter and the topping. I wasn't sure if it was a typo or deliberate, but rhubarb coffee cake with no cinnamon??? I don't think so. :)

Chocolate Turtle Cheesecake I

WOW! The first time I made this I didn't get to taste it because it was donated to a charity auction. It sold for over $200! However, my friend is a caramel-a-holic so I made one for her surprise birthday party. I was a hit and not a crumb was left over. I'll be making this again (and again).

Chocolate Cappuccino Cheesecake

I made this cheesecake yesterday and decorated it this morning. I then donated it to an auction for a local charity. It was absolutely gorgeous! I made the chocolate leaves and put them in a dollop of that yummy whipped cream mixed with Kahlua with more whipped cream around the edges. Then I drizzled melted chocolate over the top and sprinkled it with more crushed Oreo crumbs. DELICIOUS! It sold for $375.

Pork Chops for the Slow Cooker

Connie's Zucchini "Crab" Cakes

These were fantastic, but at first I had some problems with the batter. I couldn't dredge in flour because it was way too soupy. Instead I just put the batter in the hot oil and fried like a pancake...just make sure you don't make them too thick. Also, they tasted nothing like crab cakes, but more like potato pancakes. My hubby loved them and so did I. A real keeper and a great new way to use up my zuchs from the garden. Thanks!

Old Fashioned Peach Cobbler

Great dessert. Instead of doing the lattice on top of the hot peaches, dust the bottom side of a cookie sheet and do it there. Then you can just slide it on top of the fruit and finish it off. This is a great trick with pies, too.
