Fabulous Cilantro Pesto

This was delish! But the garlic was really powerful. I think it can be scaled down to three cloves. My hubby loved this on the pasta, but I think it would be better on crusty bread. Next time, as I have LOTS of fresh cilantro to use from my garden.

Jan's Chocolate Cake

I'm giving it five stars even though I'll never get to have any of the one I made today. However, if it's half as good as it looks, it will taste terrific. A friend came over and we made this cake for her boyfriends birthday party and they will be impressed...guaranteed. I used a cooked chocolate icing that my mom used to make years ago and then we dipped strawberries in white almond bark and drizzled dark chocolate over them. The went around the edge and wow it looks great!

Skillet Corn Bread

Not bad but it only took about two minutes on each side. Four minutes would have turned into a brick! I still like jiffy mix the best but this was a nice change.

Slow Cooker Chicken Taco Soup

This was really good and even better the next day. I had a turkey carcas in the freezer with quite a bit of meat left on it so I used that in place of the chicken breast. I also used some frozen tomatoes from my greenhouse (last summer's) in place of one can of tomatoes. Hubby loved it.

Chicken Cordon Bleu II

Well, there's nothing worse than over cooked meat. I cooked the chicken too long and it was DRY. I couldn't taste the ham or the cheese and didn't finish the chicken. However, I made linguine pasta for the sauce and YUMMY. Not too diet friendly, but so what. LOL I will try this recipe again, but add more cheese and not cook it so long.

Perfumed Coconut Cake

I am a coconut-aholic, but this was just too sweet for me. The cake part was moist and good, but would be better with an icing that's toned down a bit. Very pretty, but just way too sweet.

Double Layer Pumpkin Cheesecake

Very good, but instead of graham cracker crust (which I only use for apple cheesecake), use gingersnap cookies. Crush them up like you would with the crackers, add the butter the same, and press into the pan. So much better and adds a sweet crunchy texture that is just amazing.

Three-Meat Stromboli

These were pretty good but I had a hard time judging when they'd be ready for my guests. I'll make again, but not so many at once. They also need more cheese and some type of dipping sauce.

Canned Apple Pie Filling

I haven't eaten any of this yet, but it looks really good. I think I put too much nutmeg in it, however. I'm looking forward to trying it on cheesecake (autumn cheesecake from this site is 10 stars). I also used apples from a neighbors tree and they were small so peeling took a couple hours. next time it's large apples and having some help would be the key to speeding up this tedious recipe.

Tomato Bisque II

WOW! This soup is fantastic. I had a bunch of fresh tomatoes from my garden and what a great way to use them. I didn't find it too salty at all...just right. However, I added some onion to it and it was perfect. A definite keeper.

Potato Salmon Patties

Why do I keep trying to find a decent salmon pattie recipe when the Zatarans mix is so much better and easier? This recipe was dry and tastelesst. I tried adding milk like others suggested, but still not good. My son loves salmon patties, but couldn't finish these.

Buttery Carrots 'n' Onions

These are fantastic. some others said they added extra brown sugar for sweeter carrots, but i didn't and they were perfect. However, I doubleed the recipe but still only used ONE onion and it was just the right amount. Easter dinner was a hit with this dish. Very delish!

Beef Barley Soup

This was GREAT! Even my kids liked it. I bought a 7-bone roast and made beef stock with it. When the meat was done and the veggies were cooked down enough, I threw out the veggies and added new ones for even more flavor. All i used for seasoning was a little garlic powder, some parsley flakes, and a couple Knorr beef bouillion cubes. I also made some home made French bread and we were lovin' life! This one is a keeper.

Crusty French Bread

I didn't like this at all. It was doughy and had no flavor. I consider myself to be a very good baker and have made many types of bread successfully, but I did not care for this. I'll stick to my French bread recipe that came with my Kitchen Aid mixer.
