Sauteed Apples

WOW! This was great with a few tweeks. I have lots of pears and my husband and I were getting tired of eating them plain. I used 5 pears and reduced the butter to 2 TBSP and the sugar to 3 TBSP as one reviewer said the butter and sugar didn't add anything to it and I think that idea was right on. Next time I would omit the butter and add 2TBSP of the sugar. I reduced the water to 1/3 c because the pears were juicy. I also added 1/4 tsp of nutmeg and 1/8 tsp of ginger and this really improved the spice balance. I plan to make again using apples with spices and water amount as is, no butter and 3 TBSP of sugar.

Corn and Black Bean Salad

Yum, this salad is great. I do not like very spicy food so I only added in 1/4 of the chili powder and I thought it was great. Made a double batch to eat throughout the week and will definitely make again.

Luscious Lima Bean Soup

WOW! Never thought I would love lima bean soup. I had some dry lima beans in the pantry and was looking for some way to utilize these. I followed the recipe except added a bay leaf, a dash of thyme and a bit more salt. Would definitely make this again. Healthy, cheap and nutritious.

Vegan Corn Muffins

Great recipe, it turned out very moist. Since it is just my husband and I, most muffin recipes make far too much. This was the perfect size and made 8 small muffins. Instead of water, I used soy milk with a bit of lemon juice as suggested by another poster.

Three Bean Salad

Surprisingly good!. I use only 1/3 cup sugar and 1/4 cup oil and it turned out great. I have made this 3 times in the last month since it is so easy, healthy and tasty.

Parmesan-Black Pepper Arborio Rice Pilaf

Added 1/2 tsp pepper and it was still very peppery. Used veggie un-chicken broth instead of chicken broth. Also added less parmesan cheese than called for, about 1/3 cup.

Scalloped Potatoes and Onions

This was a great recipes. Creamy and delicious. I made it vegetarian by using vegetarian "chicken" broth and I also used veganaise instead of mayo. Parmesan cheese sprinkled over the top would probably be a good addition. The cooking time of 2 hours seemed to be too long. When I took the potatoes out, they seemed to be almost falling apart. ( I have an oven thermometer so I know it was at 325). Will cut the time next time I make these.

Crispy Barbequed Tofu Slices

We loved this recipe! Awesome texture. I froze the tofu 2 nights before and baked the tofu as suggested by another reviewer. It was quite time consuming with the freezing, thawing, baking, frying and baking but worth the effort. I omitted the egg for the batting, instead used a tablespoon of flour and 1/4 c water and they still came out well. We only used 1/2 cup flour for the batter and more than 3tbsp of the oil.

Portobello Mushroom Stroganoff

Great recipe, made better by suggestions from other users. I added the white wine vinegar, soy sauce, worchestershire sauce and garlic. I also used just 1/2 cup sour cream as suggested by other reviewers. Also, made it egg and dairy free by using soy sour cream and egg free pasta noodles. With a dollop of sour cream and paprika over the top, husband and I would give it 5 stars.

Jamie's Cranberry Spinach Salad

Amazing! I love this salad and will make it over and over again. I used 1/3 c oil and 1/3c sugar instead of the 1/2c the recipe called for. I also added a can of mandarin oranges as another poster suggested. Yum!

Wow, this was great! Just like I expected. instead of the vegetarian chicken flavor seasoning, I used vegetarian chicken broth concentrate from a jar. I only had 1/2 tablespoon which I didn't think would be enough, but it was perfect. Would definitely make again.

Quinoa Pilaf

Surprisingly good! I tasted this prior to adding the parsley and walnuts and thought it was kind of bland. The finished product is very tasty though. Simple and easy recipe, would definitely make again.
