Taco Seasoning I
I was born in Texas and have lived here for 35 years and I know my Tex-Mex cooking. This is the BEST taco seasoning I have EVER tasted!!! I make tacos at least twice a month (we love tacos) for my husband & boys (preschool aged) so I have had plenty of opportunities to try lots of different seasonings. This is by far the BEST. The flavors are all perfectly balanced! Since I was feeding this to small children, I left out the red pepper flakes, but there was still plenty of "warmth" in the seasoning. Not too bland for grownups. I tripled the recipe for about 2.5 lbs of meat and even more veggies (1 cup chopped onion, 1 cup chopped bell pepper and two 14.5 oz cans diced tomatoes, undrained). The liquid from the canned tomatoes really helped bind everything together. I also added an extra teaspoon of cumin b/c we just like it that way. Thank you for this recipe!!!

Crispy Cucumbers and Tomatoes in Dill Dressing
I really liked this recipe & found it refreshing, but I changed a few things. First, I followed others' advice & used only 1/2 of the oil recommended & I used canola oil b/c of its milder flavor. I also peeled & seeded the cucumbers. For the tomatoes, I used Cherub tomatoes (they are small like cherry tomatoes but with a much better flavor) & I cut them in half lengthwise. And I, too, like other reviewers, let the salad marinate much longer...in fact, it was even better the next day. Enjoy!
