Banana Butter Icing

Attempted to make twice...the first time I followed the directions as written, mixing everything but the powdered sugar all at once...DON'T DO THIS! The banana puree and lemon juice will NOT cream with the butter properly. Instead, cream the butter on its own, then add the powdered sugar in small batches. Alternate adding sugar and banana puree until it's fluffy and creamy. It has a nice banana flavor and thick texture.

Hot Pink Lemonade

Tasty and refreshing...I used a few fresh lemons and bottled lemon juice for the rest. I also cooked the berries in a little lemon juice and water (~1/4 cup total) until they released their juices...you could strain the skins out at that point if you wanted. Tart and refreshing!

Annie's Fruit Salsa and Cinnamon Chips

If I could give this 10 stars, I would! This is an original, tasty, and refreshing summer recipe that has everyone flipping out! I have taken it to numerous barbecues, picnics, and other parties and have watched it disappear. A co-worker of mine ate about 8 servings of it one afternoon...it's THAT good. It is worth it to take the time to make the cinnamon chips...they actually stay fresh for quite awhile in an airtight container, so you could make a large batch for multiple occasions. Make sure you buy thin tortillas (Pinata brand in the refrigerated case are my favorite) so the chips are nice and crispy. Dicing all the fruit to about the same size is also worth the extra time...it makes it easier to eat.

Vietnamese Iced Coffee

This is an excellent recipe. I even make it by the pitcher...just pour the hot coffee and sweetened condensed milk in a large glass pitcher, add about 3-4 cups of ice cubes and stir briskly...it makes it the perfect consistency and it's much quicker.

Chicken and Broccoli Braid

This recipe is a little too involved for my skill level, so be forewarned -- it takes a little patience and skill to use crescent roll dough to create a single sheet. The filling is delicious, though! The assembly of the final product is too complicated (and that's why I'm giving it two stars.)

Buttermilk Pound Cake II

This was a light and golden cake, but it needs something to go with it (like the Buttermilk Syrup recipe!) Just watch it towards the end of the baking time so it doesn't burn.

Crunchy Chip Cookies

This is an interesting recipe, but be forewarned...DO NOT USE puffed rice! Only use crisp rice cereal. If you use puffed rice, it comes out weird. My cookies came out a little tough...don't really know why. I probably won't make them again.

Chicken and Corn Chili

I have had to doctor this up a fair amount. I think that the boneless skinless chicken breasts are too lean for slow-cooking (mine were done after about 4 1/2 hours...any longer, and they would have been dried up). I agree with earlier reviews concerning the small amount of liquid for cooking...mine burned, too. The flavor is bland (needs more spice and/or smoky flavor), and I don't see how it would EVER be the consistency of chili...it's more of a burrito/wrap filling. Something is not right with this recipe.

Buttermilk Syrup

This is more like a caramel sauce, but nonetheless, it's DELICIOUS!!! It's good on cake, bread pudding, ice cream, French toast, etc... Highly recommended.

Mexican Chicken Corn Chowder

This is my favorite soup all year round! It has a great flavor that's not too thick, and can be spiced up or left not-so-hot. I use a large can of chicken broth in place of the water & boullion (by suggestion of my Grandma) and leave the tomatoes out sometimes (depending on who is being served). HIGHLY RECOMMEND!!!

Cappuccino in a Jar

I made this for holiday gifts...it was very tasty! The only changes I made: I would add very little nutmeg (or none at all - but I don't really like the taste), and I added a little more powdered creamer (vanilla was a big hit!)
