I'm a college student, which means I don't have many resources at hand to cook, but I do try and create simple, easy meals (which veer as far away as possible from the typical college diet of ramen). I'm also learning the difficulties that come with cooking for just one person, but I'm learning!

I love desserts, cakes especially. I also like to cook easy meals that taste great too!
My favorite family cooking traditions
My mom is half italian and pasta night is probably the best known tradition we have. I am trying to embrace my Czech heritage more, but this is proving difficult as there are few Czech cooks out there sharing their recipes.
My cooking triumphs
My cakes, I am proud of them all and I have yet to make one that has failed.
My cooking tragedies
Anything I made when I was a kid, it was a disaster. The pasta was always undercooked, the garlic bread had too much garlic salt, I don't know how my family managed to eat it and smile.

Vegetarian Chickpea Sandwich Filling
I've never liked chickpeas plain but this recipe dresses them up enough to where I don't taste just plain chickpeas. I halved the amount of onion and even then it was a little much for my personal tastes so I suggest adding a little at a time to your personal preference. Everything else I kept as is. Great sub for egg salad and so much healthier!

Spinach and Feta Pita Bake
This is delicious! I made my own Pita Bread using a recipe from this site and found it much better since I could put the toppings on the raw dough and bake it to golden brown. I used cherry tomatoes instead of romas because that's what I had and plain homemade pesto. I omitted the parmesan because I was all out but I'm sure with it would be great too. Once out of the oven I drizzled it with homemade tzatziki. To die for! Simple but so good! I feel like you could add anything you want on top (olives, chicken, etc) and it would be fantastic.

Mom's Easy Creamed Chipped Beef on Toast
My mom used to make this recipe all the time when I was a kid - it was always a favorite. I think she learned it in the army years ago, or overseas, I can't remember. I'm so glad you posted it - you make it just like she does using the Carl Budding packets! I always put mine on Texas toast - yummy! Thanks for sharing, I'm so glad I could rediscover an old favorite!
