Toscana Soup

Reviewed: Jan. 19, 2012
very good start to the recipie, I made a few changes. I used 1 lb of hot Italian sausage, I browned it along with the onions and garlic, omitted the oil all together. Drain the sausage and onion and blot with a paper towel to remove excess grease. I also added 6 cups of water and 6 tsp of chicken base, and increased the cream to 1 cup. I sliced the potatoes with my mandolin slicer on the thin setting and they came out perfect, next time I will add more potatoes. I will also cut the Kale in to smaller pieces, while the big green leafy pieces make a beautiful presentation, it's a real pain to get on the spoon. Thanks for sharing!

Chocolate Bourbon Pecan Pie

Reviewed: Dec. 19, 2009
I loved this and so did everyone at Thanksgiving dinner. I used dark chocolate chunks instead of the chips and only sprinkled a few on the bottom and after adding the filling I dotted a few on the top, made a beautiful presentation. And to everyone who said there was too much bourbon...you must have been tasting the raw filling, because I did and was worried that it would be too strong...but after baking it cooked out the alcohol and left just the perfect hint of bourbon flavor. I will definitely be making one for Christmas as well!!!

Party Cucumber Sandwiches

Reviewed: Dec. 14, 2009
Oh I love these!!! I mixed the cream cheese with mayo and spread on the rye, used one thicker slice of cucumber that basically took up the entire slice of rye, omitted the onion, and sprinkled with lemon pepper. I die!

Walnut Biscotti

Reviewed: Dec. 14, 2009
I made a little variation of this one...I used 1.5t vanilla and 2.5t maple flavor to make my own maple walnut biscotti. Oh soooo good. Made a lot of cookies!!!

Gingerbread Biscotti

Reviewed: Dec. 14, 2009
soooo good!!! I dipped one side in traditional gingerbread cookie frosting of 1C powdered sugar and 2T milk. These made me look super fancy at the wives tea, instead of bringing the boring sugar cookies.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Dec. 14, 2009
These cookies turned out awesome!!! I did add a little extra ginger, and used golden raisins. I refrigerated my dough and rolled into 1" balls to add a little height, because the first batch in the oven did come out pretty flat. The edges are crispy and the centers are oh so chewy and scrumptious. I am not a huge fan of oatmeal raisin cookies but I think these changed my mind!!!

Downeast Maine Pumpkin Bread

Great bread!!! I used 1 cup brown sugar, 1.5 cup white sugar, and .5 cup dark maple syrup. Next time I think I'll increase the maple syrup do deepen the mapley flavor! Thanks for sharing!!!

Eggnog Quick Bread

Reviewed: Feb. 1, 2009
I could not get this recipe to work out! Followed the recipe exactly twice. I added some baking soda on the third try to get it to raise up a little in the center, but it was so dry I ended up throwing that batch away also. I love eggnog and think this would be a great treat, can someone tell me what I'm doing wrong?

Artichoke & Spinach Dip Restaurant Style

Reviewed: Feb. 1, 2009
I did not like the flavor that the alfredo sauce gave this recipe. I tried it again cutting the alfredo, adding more cream cheese, extra parm and some mayo, with a splash of white wine. I also like to add some chopped water chestnuts. I cut the garlic down to 2 cloves and served on a garlic toasted baguette. This was much better in my opinion.

Candy Corn Bark

Addictive!!! We didn't add the raisins and the second time I made this I left out the peanuts. We also made a Christmas variation...red stuffed oreos, and gum drops on top. My son and his buddies couldn't get enough!!

Southwest-Style Egg Rolls

Reviewed: Feb. 1, 2009
Almost every restaurant now has it's own variation of this recipe, but I have to say the ones I make at home now are my favorite!!! Thanks so much for this recipe. I did try a little variation of my own...I used jalapeno pepper jack cheese to give an extra little kick and instead of the egg roll wrappers I used lumpia wrappers. They are very thin and crispy like a phyllo dough. I made mine thin more like spring rolls this made it easier to be a finger food and I served with avocado ranch dipping sauce - one part mashed avocado, one part ranch dressing. Easy and goes very well with this dish. Thanks so much!!!

All-Day Apple Butter

Reviewed: Oct. 10, 2008
Great recipie, the spices are just perfect!!! I did cut the sugar down to 3 cups and used half brown and half white to add a little depth. Before the last step in taking off the lid I put it through the blender and this gave it the perfect texture, very smooth! Next time I'll try adding a few tablespoons of dark maple syrup, to give it a mapley taste. All in all it was a great recipie, I loved being able to leave it in the crock pot over night and the way it made my whole house smell wonderful! Thanks for sharing!!!

Sangria! Sangria!

Reviewed: May 26, 2008
I believe I may have developed a bit of a drinking problem because of this recipe...lol! You can use inexpensive wine, make sure it's dry. I tried using a cheap box of wine so that I could prepare it for the masses, and it was gross. Something about box wine being sweet, yuck. Do not change a thing and you will have the best Sangria ever!!!

Flourless Peanut Butter Cookies

Reviewed: May 26, 2008
These cookies were amazing! I was skeptical, and thought I would be wasting a cup of peanut butter but they turned out perfect. You must let them cool on the cookie sheet, or they will fall apart. Will definitely make again!
