Nutty Coconut Fish

I love this recipe. I quite often substitute basa fillets for the cod and use almonds or cashews only for the mixed nuts. I also use dijon mustard with a low-fat mayo and it still tastes great. This one is easy to make and tastes wonderful. I cut down on the cayenne pepper (to 1/4 tsp.) because of my children but would love to try it full spice.

Strawberry Tarts

This is a simple, yet fantastic, dessert to make. I didn't have apple juice so used mango juice in place and it turned out very yummy.

Mocha Chocolate Chip Banana Muffins

This is a great recipe. I use 1/2 cup white sugar and 1/2 cuop brown sugar and 3 tbsp of decaf coffee to 1 tbsp water, as per suggestions from other users. The whole family loves these. I make them as regular size muffins and mini-muffins (baked for 13 - 15 minutes, instead of the full 25 min. for the reg. size muffins).

Lentil Curry Soup

I used this recipe as a base so that I could add whatever I had in my kitchen to it. I didn't use a blender to puree the vegies and used leftover cooked brown rice and lentils. I also added a sprouted bean trio mix. Great taste and great basic ingredients. Thanks for the recipe.

Indian Stir-Fried Shrimp in Cream Sauce (Bhagari Jhinga)

I didn't have the black mustard seeds so I used a little less than 1 tsp. of dijon mustard in the oil. I also didn't have enough cilantro but used what I had and it was very good. I used another reviewer's idea and used red pepper flakes instead of ground red pepper. This recipe's a keeper; very good taste and not too spicy.

The Best Rolled Sugar Cookies

I have used this recipe for a couple of years now and absolutely love these cookies, which is a dangerous thing for me. I find they roll out and bake well. I use a royal icing with them and they are delicious!

Gigantes (Greek Lima Beans)

I have made this recipe numerous times and love it every time. So do my husband and children. I use only 1/3 cup oil because a full cup is too much. I have added water a couple of times during baking to make sure the beans don't get too crispy. Love, love, love this recipe, especially with feta cheese melted on top (after it bakes).
