Fettuccine with Sweet Pepper-Cayenne Sauce

I will definitely serve this again, since my 2-year-old loves both red peppers and sour cream. However, I had trouble using freshly grated parmesan cheese. It all melted and clumped together when I added it to the sauce. Next time I'll use the canned variety and add some of the fresh stuff on top.

Angel Hair Pasta with Shrimp and Basil

This was a delicious and very quick meal. I used whole tomatoes, which I chopped, packed in tomato juice. I only used about 1/4 of the juice. I substituted about 1/4 cup pesto for the basil and parmesan, and sprinkled a little fresh parmesan on top. Wonderful!

Baked Salmon Fillets Dijon

My husband and I thought this was great, and even our two-year-old ate it. The bread crumbs give the impression of that breaded chicken she loves... This would be a great company dish: it's different, easy, and delicious.

Lena's Pasta Fazul

Good and healthy. My husband doesn't like beans much, and this was a good way to slip them in- you don't notice them. I thought the sauce-to-pasta ratio was a little low, so next time I'll cook less pasta.

I tried this with flounder and it was very good. It really brings out the flavor of the fish. My 2-year-old did try one piece, which I consider a victory!

Chicken In Basil Cream

This is a great dish. I pounded the chicken breasts thin so they would not need to fry for long. I cut some fat out of the sauce by using 2% milk instead of heavy cream. To compensate for the loss in thickness, I started the sauce by melting some margarine and then mixing in some flour before slowly stirring in the broth and milk. Still a very tasty sauce.

The pasta in this casserole has a great creamy texture, and the sauce is great- especially the pepperoni. Cottage cheese worked well as a substitution for the ricotta.
