Chicken, Rice and Vegetable Soup

This is a delicious soup recipe! Some veggie soups are just so blah! But I took some others suggestions and added thyme and a few bay leaves. I used organic fat free chicken broth instead of water. Yum!

Zucchini Brownies

Okay, I read the reviews and thought to myself that no brownies made with zucchini could be that good. Well, ladies hang on to your skirts - because they are fabulous! Didn't change a thing, made them as directed, just baked an additional 8 minutes. This is going to be a staple during zucchini season for sure!

Irish Bacon And Cabbage Soup

The reviews on this recipe sounded almost too good to be true. I used pancetta, since I have no clue what Irish bacon is. Needed to use 2 cans of chicken broth. It was nearly too salty to eat. If I make this again, I will probably not use pancetta, maybe just regular bacon, an unsalted tomatoes.

Campbell's® Healthy Request® Chili and Rice

I made this when we came home from being out all afternoon. It is a quick meal to throw together. I added garlic powder to this and then served over brown rice. My husband and father-in-law both raved about this, but I thought it was a simple but filling dinner. Would make again, but do a bit more to jazz it up.

Margarita Grilled Shrimp

I made these shrimp skewers the same day I prepared the slow cooker barbecue ribs. My family was coming over for a late summer evening dinner on the deck. They were delicious just as is!! Even my small grandchildren loved them. I will definitely be making them again. Might add even more garlic and cilantro next time.

I made these ribs for my daughters and their families one night. EVERYONE loved it! Nothing leftover, there is no need to change this recipe, it is just right the way it is!!

Easy Pasta Fagioli

I made this soup early in the morning pretty much as it was listed, but I chose to double the recipe, because in this cold weather - we can never have enough good soup! Although I did not have enough tomato sauce in the house, I used petite diced tomatoes with garlic and the soup was fantastic. I brought some over to my parents' house and they loved it as well! This is a very hearty and easy soup to make and I will definitely make it again in the coming winter months.

Kathy's Roast and Vegetables

I followed this recipe exactly as it was written. Although the meat was tender and delicious, the "gravy" that the soups made was much too thick for our liking. Had I know, I would have put a can of watere in it. I probably won't make this again.

Blueberry Zucchini Bread

This is a wonderfully delicious recipe. Definitely the most moist zucchini bread I have every made. Did not make any changes to the recipe, my husband and I both loved it. Will make again for sure.

Caribbean Sweet Potato Salad

This recipe is delicious! Different than the ordinary potato salad dishes. I made it exactly as the recipe states, and everyone at our family picnic loved it! Will definitely make this again.

Catherine's Spicy Chicken Soup

Absolutely delicious! I only made minor changes to the original recipe. I omitted the can of whole peeled tomatoes, used frozen corn instead of canned, and tempered down the heat by using 2 tblsp of chilli powder instead of 3. This is a must try!! I will make it again and again!
