Day Before Mashed Potatoes

I made this for Thanksgiving and it was EVERYONE's favorite dish! Incrediable. So good you don't even need gravy on it. I took the advice of others and used Yukon Gold Potatoes, onion and chive sour cream (this was key), and put it in the crock pot the night before with 1/4 stick of butter. It was ready to go the next day and all gone by the time Thanksgiving was over! Definately a keeper.

World's Best Lasagna

Excellent! Make this for sure. This was the first time I have ever made lasagna and my family was VERY impressed! It does take some time (but mainly just because you let the sauce simmer for a while). But it is well worth it! I took the advice of others and added a pinch of nutmeg to the riccota, soaked the lasagna noodles in hot water for 30 mins (instead of cooking - great tip!) and made sure to add the fennel seeds (yum!). I found that the ounces were off a little bit from the ingrediants that my store carried (such as 15 oz of riccota instead of 16 oz, etc.), but being an oz off here or there it still turned out great. And I used double sauce for each layer and extra cheese (enough to completely cover the layers). My husband actually told me it was better than his mother's lasagna -- and no one has ever topped hers! Compliment indeed!

Meringue II

Wow! I have a novice cook/baker and this turned out perfect for me!! I bought a new Kitchenaid mixer and was dying to use it, so I made a chocolate meringue pie. The meringue (of which I sometimes like) was AMAZING! The taste was that of a yummy marshmallow - not too sugary at all. This was VERY easy to make (esp. will my mixer). I used the comments of others and kept the mixer in the saucepan on low (constantly stirring) for 5 mins, as mine did not come out clear either. Also, I constantly beat on high in the mixer until foamy and continued beating as I added the saucepan mixer and slowly added the sugar too. AMAZING! Definately a keeper...my family was very impressed!

Brown Sugar Meatloaf

I had never made meatloaf before and made this for my sister and husband who just had a baby. They LOVED IT! And have requested me to make it again once the leftovers were gone. I will admit I tried it (not a meatloaf fan) and thought it was very yummy...not to mention it made the house smell heavenly! I took the reviewers advice and added the mix to the top. I didn't add onions or ginger, but that is just because my sister didn't want it. EXCELLENT taste, simple receipe....definate keeper!

Egg and Sausage Casserole

This recipe is really good...and really easy! I meant to add milk as the other reviewers mentioned, but I forgot and it still turned out yummy! Next time I make it I will add the milk and some chopped onions (would also add green peppers if my hubby liked them). I used 9 eggs and it turned out great. I like how you can add whatever ingrediants you want. Great basic recipe to do that. My husband poured salsa on the top of his and rated the recipe an "A-" as did I. So pretty great rating for first time making it!

Chicken Pot Pie IX

I found this recipe hard to make (but then again I tried to make it using user suggestions). I doubled the sauce as users suggested and got deep dish pie crust. I found all the ingrediants didn't fit, nor the sauce. And pie top didn't fit over it. Hmm.. it is cooking now (it looks ugly!) but I am not sure how it will taste. But I won't make again because I felt it was hard. Then again I am 9 1/2 months pregnant, so my brain is also mush...so that could be the real reason it doesn't turn out. =)

Cucumber Slices With Dill

Really yummy and very easy. As others suggested I cut the sugar in half (1/2 cup). I let sit overnight. The next day I put the slices over lettuce and added goat cheese crumbles (and used the juice as a salad dressing) and had quite the yummy salad!

Quick and Easy Chicken Noodle Soup

Really yummy and very easy! I followed the recipe but did add 64 ounces of chicken broth because that's what I had (and I found it wasn't too much). I did add a bit of sea salt as my husband likes this soup salty (yep, ruined by years of salty canned soup!...which no more canned for us...). Delish! I also added bow tie noodles which I love in chicken noodle. I cooked the noodles separately as advised and froze half the recipe without the noodles and put the cooked noodles in the soup I saved for us to eat tonight. I will be making this a lot.

Simple Baked Apples
