Excellent! Make this for sure. This was the first time I have ever made lasagna and my family was VERY impressed! It does take some time (but mainly just because you let the sauce simmer for a while). But it is well worth it! I took the advice of others and added a pinch of nutmeg to the riccota, soaked the lasagna noodles in hot water for 30 mins (instead of cooking - great tip!) and made sure to add the fennel seeds (yum!). I found that the ounces were off a little bit from the ingrediants that my store carried (such as 15 oz of riccota instead of 16 oz, etc.), but being an oz off here or there it still turned out great. And I used double sauce for each layer and extra cheese (enough to completely cover the layers). My husband actually told me it was better than his mother's lasagna -- and no one has ever topped hers! Compliment indeed!
