Chicken Cordon Bleu I

This recipe is very good. The only thing I add is a thin line of honey mustard before I roll up the chicken.

Quick Black Beans and Rice

With the onions I add mushrooms (I don't measure, just put about a 1/2 cup in). Also I put in minced garlic and let that cook with the veggies. I delete the tomatoes and add Worcestershire sauce (about a teaspoon) and Adobo seasoning (to taste). I use white rice instead of brown because that's what I always seem to have on hand.

Chicken Pot Pie IX

I use deep dish pie crusts and there is still a lot of filling I don't use. I do cut back on the sliced celery (to 1/4 cup) because I don't like the heavy celery taste and I think the celery seed is enough. I cut back on peas (to 1/2 cup) because I felt like it was pea overload. Other than that, this recipe is amazing. My hubby loves putting it on top of plain mashed potatoes.

Aunt Betty's Banana Pudding

I made this for my husband and he went nuts for it. He said it was the best banana pudding I've made. I didn't have the frozen whipped topping and it still came out great. I'm excited to try it with the topping next. Also, I'd like to try french vanilla pudding instead of just vanilla.

Ghirardelli® Dark Chocolate Truffles

Good recipe. I did not like the cocoa on the outside, it was really bitter. I also wish I put flavoring in them. I expected the center to be softer than the outside (like something you'd get from Godiva). I would remake this with a flavoring (perhaps raspberry) and let it sit then roll in this exact recipe for the outer "shell".

Jimmbo's Garlic Knots

I wanted to like this recipe, I really did. Perhaps I didn't do something right but it just tasted greasy. Perhaps it was because I used minced garlic instead of fresh. I had difficulty getting the oil to stick and soak in the knots. They were good, but not what I was expecting. I also thought the knots were better the next day after they sat.

Chicken Enchiladas II

My husband loves these and his complaint is always that there just aren't enough! I use chopped red onions just because I always seem to have that instead of green. While the onions are cooking I add the garlic and also Adobo seasoning. I don't use diced green chilies but rather the green Chile enchilada sauce because I definitely agree that you need to add more sauce.

Cheesy Fried Potatoes

My husband picked this recipe out and he loves it! I only made some minor changes. I usually cook the bacon in the microwave and use just a little bit of oil with the butter in the pan to cook the potatoes. I add some paprika to the potatoes as they cook. Once they're browned I take them out and drain the excess oil, I'm sure this modification keeps it healthier! However, I use three slices of bacon instead of two and I double the amount of cheese! The dish comes out really good and my husband says that this will always be his first choice for breakfast!

Chicken Broccoli Shells

I love this recipe. I found this recipe years ago in a cooking magazine and I've been making it since. I usually add some garlic and Italian seasonings into the alfredo sauce. I also add more cheese to make it thicker.

Chicken Marsala

This recipe is very tasty. I doubled the mushrooms (which I think I may triple the next time - I love mushrooms!) and I used 1 cup of marsala wine sauce instead. Other than that, I used the recipe as is, and it was delicious. I will definitely be making again.

Garlic Mashed Potatoes Secret Recipe

Loved it! I cut the recipe down to 5 servings. I only used one stick of butter, and not as much salt. I feel that it was a little too garlicky, but very tasty. I will definitely make again, and I am happy that my husband now trusts me to make mashed potatoes again!

Fudge Chunkies

Delicious. The only problem I have is that they are eaten up too quick! Next time I will double the recipe because hubby and I like a larger cookie and the recipe only made 10 when I scooped with a heaping tablespoon measuring spoon.
